Chicken Parmesan

1.Preheat the oven to 450°
- 2 large eggs
- 1/4 cup milk
- 1/2 cup all-purpose flour
- 2 cups panko bread crumbs
- Four 8-oz. skinless, boneless chicken breasts, pounded 3/4 inch thick
- salt and freshly ground pepper
- 3/4 cup canola oil
- 1 1/2 cups tomato sauce
- 1/4 cup parmigiano-reggiano cheese
- 1 cup shredded mozzarella
- 2 TBsp chopped flat-leaf parsley
Crab Cakes

In bowl, combine green onions, mayonnaise, lemon juice, seasoned salt, garlic powder and cayenne pepper
- 1/4 cup finely chopped green onions
- 1/4 cup mayonnaise
- 1 TBL fresh squeezed lemon juice
- 1/4 tsp seasoned salt
- 1/2 tsp garlic powder
- dash cayenne pepper
- 2 (6 oz.) cans crabmeat, drained
- 1 medium egg, beaten
- 1 cup seasoned breadcrumbs
- 3 TBLs butter
Mushroom Gravy

1. Heat butter over medium heat in a saucepan until it foams
- 1/4 cup butter
- 1 (16 ounce) package sliced mushrooms
- salt to taste
- 1/4 cup all-purpose flour, or as needed
- 1 quart beef stock
- 1 pinch ground black pepper to taste
- fresh thyme leaves, to taste (optional)
Herbed Salmon

1. Preheat oven to 350F. Rinse fish; pat dry
- 1 lb. skinless salmon fillet, cut into 4 portions
- 1 lemon
- 1 Tbsp snipped fresh dillweed
- 1 Tbsp snipped fresh tarragon or lemon thyme
- 1 Tbsp snipped fresh flat-leaf parsley
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 2 Tbsp butter, softened
Teriyaki Sauce

Combine ingredients in a saucepan on medium heat until the sugar is dissolved
- 1/2 cup soy sauce
- 1/4 cup water
- 2 tablespoons sweet rice wine
- 1 tablespoon, plus 2 teaspoons brown sugar
- 1/4 cup sugar
- 1 1/2 teaspoons minced garlic
- 1 1/2 teaspoons minced ginger
- 1/2 tablespoon cornstarch
- 1 tablespoon water
Big Strawberry Shortcake

Position rack in center of oven, and preheat oven to 350ºF
- Shortcake
- 1 orange
- 1 cup unsalted butter (2 sticks)
- 2 cup sugar
- 2 cup all-purpose flour
- 5 large eggs
- Filling
- 2 pints ripe strawberries,hulled
- 3 Tbsp sugar
- 2 cup heavy or whipping cream
- 1 tsp vanilla extract

Chef John's Italian Meatballs

Cover a baking sheet with foil and spray lightly with cooking spray
- 1/3 cup plain bread crumbs
- 1/2 cup milk
- 2 tablespoons olive oil
- 1 onion, diced
- 1 pound ground beef
- 1 pound ground pork
- 2 eggs
- 1/4 bunch fresh parsley, chopped
- 3 cloves garlic, crushed
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried Italian herb seasoning
- 2 tablespoons grated Parmesan cheese
