Reduced-Fat Carrot Cake with Cream Cheese Frosting

1. Heat oven: Adjust oven rack to middle position and heat oven to 350 degrees
- Any cream cheese with 1/3 less fat will work here. To ensure thick frosting, use marshmallow creme (such as Fluff or Jet-Puffed), not marshmallow sauce. Shred carrots on large holes of a box grater or with the shredding disk of a food processor.

Barbie's Tuna Salad

Directions In a medium bowl, stir together the tuna, mayonnaise, Parmesan cheese, and onion flakes

- 6 tablespoons mayonnaise or salad dressing
- 1 tablespoon Parmesan cheese
- 3 tablespoons sweet pickle relish
- 1/8 teaspoon dried minced onion flakes

- 1 tablespoon dried parsley
- 1 teaspoon dried dill weed
- 1 pinch garlic powder

- Water, oil and eggs called for on brownie box.
- 1 container Betty Crocker Rich and Creamy chocolate frosting
Chicken Salad with Raisin Bread

Combine all ingredients except bread and lettuce in a medium bowl and mix well
- 2 (12-ounce) cans chicken, drained, or 2 cup shredded cooked chicken
- 1-2 chopped unpeeled Granny Smith apples
- 1 cup chopped celery
- 1/2 cup chopped walnuts {we omitted this}
- 1/2 cup mayonnaise
- 2 Tbsp. plain yogurt
- 2 Tbsp. honey mustard
- 1 tsp. lemon juice
- 1/8 tsp. salt
- 8 slices raisin bread

- 2 chicken breasts, pounded to 1/4" thickness
- Salt and pepper
- 1 tsp olive oil
- 1 clove garlic, crushed
- 1/2 tsp dried rosemary
- 1 cup cannellini beans, rinsed
- 2 tbsp diced roasted red pepper
- 4 cups baby spinach leaves
