In a large pot, cook beef until browned
- 3/4 pd. ground beef
- 2 cans (14-1/2 oz each) beef broth
- 2 cups water
- 1 can (28 oz) diced tomatoes, undrained
- 3 celery ribs, chopped
- 2 large carrots, sliced
- 2 medium onions, sliced
- 1 medium potato, peeled and cubed
- 1 1/2 cups fresh cauliflowerets
- 2 tsp. tarragon
- 1 tbs garlic powder
- 1 tbs. minced parsley
- 1/2 tsp salt
- 1/8 tsp. pepper
- 3/4 cup cooked macaroni
Pear Granola Muffins

Preheat oven to 400 degrees
- 1 cup all-purpose flour
- 3/4 cup whole-wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 large eggs
- 3/4 cup packed light-brown sugar
- 1/2 cup plain low-fat yogurt
- 2 tablespoons unsalted butter, melted
- 3/4 cup plain granola
- 2 D'Anjou pears (2 cups), peeled and cut into 1/4-inch dice
- FOR GRANOLA CRISP TOPPING
- (or use an additional 3/4 cup plain granola)
