- 8 oz. fat free cream cheese (softened)
- 1 cup cold skim milk
- 2 Tblsp. lemon juice
- 1 small box instant vanilla pudding (sugar free)
- 8 oz. fat free Cool Whip
- 1 can lite cherry pie filling (or any flavor)

- 4-1/2 teaspoons all-purpose flour

- 4 cups (16 ounces) shredded part-skim mozzarella cheese

- 1 14.5oz can diced tomatoes with juices
- 2 tsp cumin
- 1/4 cup lime juice
- 1 cup chopped onion
- 2 Tbsp balsamic vinegar
- 1 tsp minced garlic
- Shredded cheddar, plain non-fat yogurt or sour cream, sliced avocado, and chopped fresh cilantro for garnish (optional)
