Mediterranean Scones

Combine eggs, milk, and olives in a small bowl; set aside
- 2 eggs
- 1/2 cup milk
- 1/4 cup chopped black olives
- 2 3/4 cup baking mix (Bisquick)
- 1/2 tsp of each Garlic powder and Oregano
- 1/4 tsp of each Basil and Rosemary
Beef Tenderloin Medallions with Creamy Cafe Balsamic Sauce

1. DISSOLVE 1 teaspoon coffee crystals in balsamic vinegar
- 1/2 tablespoon balsamic vinegar
- 1 tablespoon Crisco® Pure Canola Oil
- 1 teaspoon jarred roasted garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound beef tenderloin, cut into 8 (1/2-inch) slices
- 2 tablespoons Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
- 1 (8 oz.) package sliced white or baby portobello mushrooms
- CREAMY BALSAMIC COFFEE SAUCE
- 1/3 cup beef broth
- 2 tablespoons heavy cream
- 1-1/2 tablespoons balsamic vinegar
- 1-1/2 tablespoons dark brown sugar
- 1/4 teaspoon Worcestershire sauce
- Cracked black pepper, if desired

- 1 Cut bread loaf horizontally in half. Drizzle oil over cut sides of bread.
- 2 Layer salami, cheese, prosciutto and onion on bottom of bread; add top of bread. Cut loaf into 4 pieces.
Baked Penne with Chicken and Sun- Dried Tomatoes

Preheat oven to 400. Butter two shallow 2 quart baking dishes
- 6 tbs. butter, plus more for baking dishes
- coarse salt and pepper
- 1 pd. penne rigate
- 1 tsp. olive oil
- 2 boneless, chicken breast halves, halved horizontally
- 1/2 cup plus 2 tbs. flour
- 4 garlic cloves, minced
- 6 cups whole milk
- 10 oz. white mushrooms , thinly sliced
- 1/2 cup oil packed sun-dried tomatoes, drained and thinly sliced
- 1 1/2 cups shredded provolone cheese (6oz)
- 1 cup finely grated Parmesan cheese (4oz)
Pressure Cooker Texas Style Pinto Beans

Add all ingredients to the pressure cooker except the salt
- 2 cups pinto beans (soaked for 4-8 hours to avoid excess cooking time)
- 6 cups water
- 4 stripes bacon (cooked)
- 1 cup chopped onion
- 1 can rotel
- 1 T cumin
- 1 T chili powder
- 2 cloves of garlic chopped
- salt to taste
Zucchini Cupcakes

In a large bowl, beat the eggs, sugar, oil, orange juice and extract
- CARAMEL FROSTING:
- 3 eggs
- 1-1/3 cups sugar
- 1/2 cup canola oil
- 1/2 cup orange juice
- 1 teaspoon almond extract
- 2-1/2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon ground cloves
- 1-1/2 cups shredded zucchini
- 1 cup packed brown sugar
- 1/2 cup butter, cubed
- 1/4 cup 2% milk
- 1 teaspoon vanilla extract
- 1-1/2 to 2 cups confectioners' sugar
Apple Crisp ( Betty Crocker)

Heat oven to 375 Grease bottom and sides of square pan, 8x8x2 inches
- 4 medium tart apples, sliced (4 cups)
- 2/3 cup packed brown sugar
- 1/2 cup flour
- 1/2 cup old fashioned or quick oats
- 1/3 cup butter or margarine, softened
- 3/4 tsp. cinnamon
- 3/4 tsp. nutmeg

In a large mixing bowl, combine apples with sugar, and raisins
- 5 cups tart apples, chopped
- 1 cup sugar
- 1 cup dark raisins
- 2 T. coconut oil
- 2 tsp. vanilla
- 1 egg, beaten
- 1/2 cup buttermilk
- 2 cups whole wheat flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
Easy Peach Cobbler ( From Linda Smitherman)

In a 9x13 inch pan pour the can peaches with the juice
- 1 Betty Crocker Cake Mix ( Cinnamon Streusel)
- 2 Large cans of Peaches
- 1 Stick of butter

- 1 tablespoon vegetable oil
