Piña Colada Cupcakes

Preheat the oven to 325. Line 2 muffin pans with liners
- 3/4 pound unsalted butter at room temperature
- 2 cups sugar
- 5 extra large eggs at room temperature
- 1 1/2 teaspoons vanilla extract
- 2 teaspoons coconut rum or light rum
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 7 ounces sweetened, shredded coconut
Avocado Corn Salsa

Combine avocado, corn, tomato and cilantro in a small bowl
- 1/2 avocado, diced
- 1/2 cup thawed frozen corn kernels
- 1 plum tomato, chopped
- 2 teaspoons chopped fresh cilantro
- Lime juice, to taste
- Salt, to taste
Hot Artichoke Spinach Dip

In a small skillet, cook onions in butter until tender; set aside
- 1/2 cup chopped green onions
- 2 tbs. butter
- 4 oz. cream cheese, softened
- 2 pkg. (10oz each) frozen creamed spinach, thawed
- 1 can (14 oz) water packed artichoke hearts, rinsed, drained and chopped
- 1 cup shredded Monterey jack cheese
- 1 cup shredded Swiss cheese
- 1 tbs. Worcestershire sauce
- 1/2 tbs. Cajun seasoning
- 1/2 tsp. minced fresh thyme
- 1/2 tsp. hot pepper sauce
- 1 garlic clove, minced
- 1/4 cup Parmesan cheese
- Toasted baguette slices or pita chips
Bacon-y Bok Choy

1. Fry bacon in a large skillet over medium heat until crispy
- 4 slices bacon, chopped
- 2 pounds baby Bok Chok
- 1 tsp. olive oil
- 1/2 small red onion, chopped
- 1 tsp. red pepper flakes
- 1 tsp. minced garlic
- salt to taste

- 3 lbs ground beef or 3 lbs ground turkey
- 2 cups diced onions
- 1 cup celery
- 1 cup bell pepper
- 1 large carrot, 1 cup diced
- 1 fresh jalapeno pepper, minced
- 4 garlic cloves, minced
- 4 ounces mushrooms, sliced
- 1/4 cup fresh oregano
- 1/4 cup fresh parsley
- 1 teaspoon fresh thyme
- 1/4 cup fresh basil, chopped
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 105 ounces tomato sauce
- 6 ounces tomato paste
Specialty Breads

These are the amounts for 1 regular loaf of bread
- to to to 160-180 190 cook to a higher temp than the basic recipe. I don't know the science on why this is, but it's just dough-y if you cook it to 160-180 like I mentioned in the basic recipe. These aren't done until about 190 degrees.
- Jalapeno Cheddar --
- 1/2 1/2 1/2 cup chopped jalapenos (from a jar)
- 6 6 6 oz. cubed cheddar
- 2 2 2 cloves pressed garlic
- Rosemary Olive
- 2 2 2 cloves pressed garlic
- 1/2 1/2 1/2 c. chopped kalamata olives
- 1 1 1 T rosemary
- Roasted Corn & Pepperjack
- 1 3/4 to olive oil, saute 3/4 c. frozen corn until it begins to brown
- 6 6 6 oz. cubed pepperjack cheese
- 2 2 2 cloves pressed garlic
- 1/2 1/2 1/2 tsp. cumin
- Sun-Dried Tomato & Feta
- 3/4 3/4 3/4 c. chopped sun-dried tomato
- 4 4 4 oz. feta cheese
- 2 2 2 cloves pressed garlic
- Garlic-Herb -- this is a great one just for dinner rolls!
- 1 1 1 T oregano
- 1 1 1 T basil
- 1/2 1/2 1/2 T rosemary
- 3-4 3-4 3-4 cloves pressed garlic
- Brush with olive oil after baking
- Cranberry Orange
- 1/2 1/2 1/2 tsp. cloves
- 1 1 1 tsp. cinnamon

- 1/3 zest of about a 1/3 of an orange

Vanilla Ice Cream

- 2 large cans of evaporated milk
- 2 tbs. vanilla

Spicy Cilantro Dressing

Place all ingredients except sour cream and mayo in food processor
- 2 tbs. fresh lime juice
- 1 tbs. white wine vinegar
- 1 tbs. Worcestershire sauce
- 1/2 cup coarsely chopped fresh cilantro
- 2 whole green onions, coarsely chopped
- 2 fresh jalapeno peppers, seeded and chopped
- 1 cup sour cream
- 1 cup mayonnaise
- salt and pepper to taste
Classic Carrot Cake Recipe
