- For the cream cheese frosting:
- 2 1/2 cups all-purpose flour (recommended: White Lily)

- 1 1/2 cups canola oil
- 1 teaspoon vinegar
- 1 (1-ounce) bottle red food coloring

- 1 cup buttermilk
- 1/2 cup margarine
- 1 (8-ounce) package cream cheese
- 1 box confectioners' sugar, sifted
- 1/2 teaspoon vanilla
- 1 cup chopped lightly toasted pecans

- 1 (16oz) tube prepared polenta, cut into 12 slices
- 1 (15.5 oz) can red kidney beans, rinsed and drained
- 1 cup salsa

Heat oven to 375ºF. Place bread slices on ungreased cookie sheet
- 12 slices Italian bread, 1/2 inch thick
- 1/4 cup olive or vegetable oil
- 2 medium tomatoes, chopped (1 1/2 cups)
- 2 garlic cloves, finely chopped
- 3 tablespoons chopped fresh basil leaves
- 2 tablespoons small capers, drained
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

- *Gluten-Free Flour Mix:
- 2.5 C Gluten-Free Flour Mix (see below)
- 1 C Brown Sugar, loosely packed
- 1-1/2 t Baking Soda

- ½ t Salt
- ½ t Cinnamon
- 1 t Xanthan Gum, Agar, OR Guar Gum
- 2 C Mashed EXTREMELY Ripe Bananas (about 5-6 bananas)
- 1 T gluten-free vanilla extract
- ½ C Grapeseed or Canola or Sunflower Oil
- 1/3 c water, room temperature

- 2 pkgs (18 rectangles) graham crackers
- 2/3 cup unsalted butter, melted
- 2 12-oz jars chocolate fudge sauce
- 1-1/2 qts chocolate ice cream
- 3/4 cup toasted almonds, chopped
- 2-1/2 cups mini marshmallows
- 1 qt vanilla ice cream
Blackened Tilapia Sandwich with Cilantro Lime Mayo

In a shallow dish, combine first 6 ingredients
- 1/4 cup sweet paprika
- 2 tablespoons ground thyme
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1/2 cup (1 stick) butter, melted
- 4 (10-ounce) tilapia fillets
- 4 Kaiser buns, split, buttered and toasted
- Cilantro Lime Mayonnaise, recipe follows
- Store-bought mango salsa
- 1 cup mayonnaise
- 1/4 cup freshly chopped cilantro leaves
- 1 tablespoon fresh lime juice
- In a small bowl, combine all ingredients. Cover and chill.
Sneaky Gravy

Heat the butter or pan drippings over medium heat in a saute pan
- 2 tbsp butter or pan drippings (from chicken or turkey)
- 1 1/2 tbsp whole wheat flour
- 2 cups chicken broth, low sodium
- 1 1/2 tsp Worcestershire sauce
- 1/2 cup lentil puree
- Salt and pepper to taste
- Optional extra: 1/2 onion, minced or pureed
