- 3 to 4 links (about 3/4 pound) Italian sausage
- 4 1/2 tablespoons olive oil
- 1 medium-size eggplant, peeled and cut into a 3/4-inch dice
- 2 small zucchini, halved and sliced
- 1 large onion, quartered and thinly sliced
- 1 medium-size green bell pepper, halved, seeded, and sliced
- 2 to 3 garlic cloves, minced
- 2 cups canned diced tomatoes
- 1 tablespoon plus 1 teaspoon tomato paste
- Salt and pepper
- 2 tablespoons chopped fresh Italian parsley
- 3 tablespoons chopped fresh basil

- 3/4 cup all-purpose gluten-free flour
- 1/3 teaspoon xanthan gum
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1 stick unsalted butter, at room temperature
- scant 1/2 cup granulated sugar
- 1/2 cup packed brown sugar (light or dark)
- 1 teaspoon vanilla extract
- 1 large egg, lightly beaten
- 1 cup semisweet chocolate chips
- 1 cup raisins (only good ones, or just double up on the chocolate chips)

- 3 tablespoons chopped sun-dried tomatoes (not oil-packed)
- 1 cup water
- 1 package (3 oz) cream cheese, softened
- 1/2 cup finely shredded Asiago cheese (2 oz)
- 3/4 cup sour cream
- 1/4 cup thinly sliced green onions (4 medium)
- Assorted fresh vegetables or baguette slices, if desired

- 2 tsp baking powder
- 1/2 tsp salt
- 2 1/2 tsp pumpkin pie spice (equal parts cinnamon, ground ginger, and nutmeg)
- 2 large eggs
- 3 tbsp canola oil or walnut oil
- 1/2 cup packed brown sugar
- 6 tbsp orange puree
- 1/2 cup pumpkin puree
- 1 tsp pure vanilla extract
