Meat Ragù Recipe- An Easy Red Meat Pasta Sauce

Obviously you can use any ground meat you prefer- even ground turkey
- 1 tablespoon extra virgin olive oil
- 1 pound ground beef- I used Black Angus beef
- 1 good sized onion, diced
- 4 cloves garlic, chopped
- 1/4 cup organic tomato paste
- 1 cup organic beef broth
- 1 28-oz can Muir Glen organic whole tomatoes, with juice
- 1 cup red wine
- 1 teaspoon dried oregano
- 2 teaspoons dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 bay leaf
- Sea salt and pepper, to taste
- A splash of balsamic vinegar
- A dab of organic raw agave, if needed
Thick & Chewy Chocolate Chip Cookies

1. In a medium sized bowl, combine the first four (dry) ingredients
- 1 cup + 2 tBsp. Bob’s Red Mill All Purpose Flour
- 1/2 tsp. xanthan gum
- 1/4 tsp. salt
- 1/2 tsp. baking soda
- 1/2 stick unsalted butter, at room temperature
- 6 tBsp. granulated sugar
- 6 tBsp. packed brown sugar (light or dark – it don’t matter to me)
- 1 1/2 tsp. vanilla extract
- 1 large egg
- 8 oz. semisweet chocolate chips
Eggplant Zucchini Bolognese

Cook pasta according to package directions
- 1 package (16 ounces) penne pasta
- 1 small eggplant, peeled and cut into 1-inch pieces
- 1 medium zucchini, cut into 1/4-inch slices
- 1 medium yellow summer squash, cut into 1/4-inch slices
- 1 cup chopped onion
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 pound lean ground beef
- 1 can (28 ounces) tomato puree
- 1 tablespoon Italian seasoning
- 1 tablespoon brown sugar
- 8 teaspoons grated Parmesan cheese
Old Fashioned Spaghetti and Meatballs

To prepare meatballs: Combine bulgur and water in a small bowl
- Meatballs
- 1/3 cup bulgur
- 1/2 cup hot water
- 4 ounces lean ground beef
- 4 ounces hot Italian sausage
- 1 medium onion, very finely chopped
- 2 large egg whites, lightly beaten
- 3 cloves garlic, very finely chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1 cup fresh breadcrumbs, preferably whole-wheat (see Tip)
- Sauce & Spaghetti
- 4 cups prepared marinara sauce
- 1/2 cup slivered fresh basil leaves, or chopped fresh parsley
- 1 pound whole-wheat spaghetti, or linguine
- 1/2 cup freshly grated Parmesan, or Romano cheese (1 ounce)

- 1/4 cup peanut butter
- 1-1/2 teaspoons honey
- 1/2 cup miniature semisweet chocolate chips
- 2 tablespoons raisins
- 4 medium unpeeled Red Delicious apples, cored
Zucchini Muffins

Wash zucchini and remove ends
- 1 ½ c. shredded zucchini (about 2 small)
- 2 c. whole-grain pancake or biscuit mix
- 1 tsp. cinnamon
- 1 teaspoon allspice
- 2 eggs
- ¾ c. brown sugar
- ¼ c. unsweetened applesauce
- 2 tsp. fresh lemon juice
- powdered sugar (enough to dust the muffins)

• Take a large pot of salted boiling water and add pasta to it
- • 1 Pound seashell pasta
- • 1/4 Pound pepperoni sausage, chopped
- • 1/2 Pound asiago cheese, diced
- • 1/4 Pound genoa salami, chopped

- • 1 Red bell pepper, diced
