Fluffy Kitchen Aid Frosting

Place sugar, cream of tatar, salt, water and corn syrup in saucepan
- 1 1/2 cups sugar
- 1/2 tsp cream of tartar
- 1/2 tsp salt
- 1/2 cup water
- 1 1/2 Tbsp light corn syrup
- 2 egg whites
- 1 1/2 tsp vanilla
Berry Yummy Peach Bars

Vegan, Gluten-Free, Nut-Free, Soy-Free
- For fruit filling:
- 1 can (15 ounce) sliced peaches (in juice)
- ¼ cup raw sugar or packed brown sugar
- 2 tbsp cornstarch (or tapioca starch)
- 1 cup blueberries
- 1 cup blackberries
- For crust and topping:
- 1 package Enjoy Life Snickerdoodle cookies*
- 1 tbsp Spectrum organic shortening [can sub Earth Balance or other soy-free margarine]
- 1 tsp vanilla extract
- 1/3 cup packed brown sugar
Chocolate Peanut Butter Brownies

Blend together the peanut butter, sugar and 1 beaten egg
- 1 cup creamy peanut butter
- 3/4 cup sugar
- 3 eggs
- 1 cup sugar minus 1 Tbsp
- 1/2 cup melted butter or margarine
- 2 squares unsweetened chocolate
- 3/4 cup minus 1 Tbsp flour
- 1/4 tsp salt, optional
- 1 tsp vanilla
One Pot “Spaghetti” & Meatballs

This is still basically spaghetti & meatballs, just with fusilli
- 4 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- kosher salt & fresh ground pepper, to taste
- 2 carrots, minced
- 1 to 1 1/2 pounds ground beef
- 1 cup gluten free breadcrumbs (any kind)
- 2 large eggs, beaten
- 1/4 cup milk (any kind, not non-fat)
- 3/4 cup grated cheese (any kind – Parmesan works particularly well)
- 1/4 cup chopped fresh parsley (or half that if dried)
- 1 pound Tinkyada GF Pasta(any kind – if spaghetti, break in half)
- 6 cups stock
- 3 cups tomato sauce
- 1/2 cup fresh basil, shredded (optional)

You can serve this on Gluten Free rolls, or you can simply eat it by the spoonful
- 2 medium yellow onions, chopped
- 2 tBsp cooking oil (I use canola)
- Kosher salt & fresh ground pepper to taste
- 1 pound ground beef
- 2-3 cups tomato sauce
- 2-3 cups stock (I use homemade because I’m, um, thrifty)
- 2-3 cups cooked brown rice (Trust Me)
- 2/3 cup brown sugar (Really)
- 3-4 tBsp Worcestershire Sauce

1. Heat oven to 375 degrees F
- 2 tbspunsalted butter, melted, plus more for dish
- 3/4 cuppanko (bread crumbs)
- 1 lemon, zest and juice
- 3 tbspcoarsely chopped fresh dill
- 2 lbsassorted potatoes (sweet potatoes, small Yukon Golds and small red potatoes), sliced 3/8 inch thick
- 3/4 tspkosher salt
- 1/2 tspground pepper
- 1-1/4 cups (6 oz)crumbled feta
- 3/4 cuplow-sodium chicken broth
- 1-1/4 lbsskinless salmon filet

1. Place the 2 ounces malted milk balls in large resealable plastic bag and finely crush with rolling pin
- 2 oz. malted milk balls (about 2/3 cup)
- 4 oz. milk chocolate, coarsely chopped
- 3 oz. bittersweet chocolate, coarsely chopped
- 3 cups whipping cream
- 1/3 cup chocolate malted milk powder
- 2 Tbsp. chocolate liqueur, almond liqueur, or milk
- 1/2 tsp. vanilla
- 1 Tbsp. sugar
- 2 tsp. unsweetened cocoa powder
- Malted milk balls (optional)

1. Rinse salmon and pat dry; cut into 1-inch chunks
- 1 lb. fresh salmon fillet, skinned and cut into 1-inch chunks
- 3/4 cup panko (Japanese-style bread crumbs)
- 2 green onions, thinly sliced
- 2 Tbsp. snipped fresh cilantro
- 2 tsp. grated fresh ginger
- 1 clove garlic, minced
- 2 eggs, lightly beaten
- 2 Tbsp. reduced-sodium soy sauce
- 1 Tbsp. lemon juice
- 2 Tbsp. vegetable oil
- 1 recipe Lime Mayonnaise
- Sandwich buns and leaf lettuce (optional)
