- 1 quart oil for deep frying
- 1 cup all-purpose flour
- 2/3 cup yellow cornmeal
- 1/4 cup white sugar

- 2 tablespoons bacon drippings
- 1 egg, beaten
- 1 1/4 cups buttermilk

Combine spinach and artichokes
- 3/4 pound, 4 to 5 cups, baby spinach, packed
- 2 (15-ounce) cans artichoke hearts packed in water, drained and sliced
- 1 clove garlic, finely chopped
- 2 teaspoons lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons red wine vinegar
- 1/4 to 1/3 cup extra-virgin olive oil
- Salt and pepper
- A handful shredded Parmigiano-Reggiano
Peanut Butter Muffins

Preheat oven to 350° F (180° C)
- 2 eggs
- 1 c. milk
- ¼ c. banana (about 1 banana), mashed with a fork
- ¼ c. peanut butter
- 1/3 c. vegetable oil
- ¼ c. frozen apple juice concentrate, thawed (left out of the freezer until it's soft)
- ¼ c. nonfat dry milk
- 2 ¼ c. flour
- 1 ½ tsp. baking powder
- 1 tsp. baking soda
- nonstick cooking spray
Down Under BBQ Sauce

Whisk together all ingredients except chili powder, hot sauce, and pepper
- 1/2 vegetable broth
- 1 cup orange or white puree
- 1/2 cup cider vinegar
- 3/4 cup tomato paste
- 1/4 tsp garlic powder
- 2 tbsp Worcestershire sauce
- 2 tbsp honey
- 1-2 tsp chili powder
- Hot sauce to taste
- Freshly ground pepper to taste

Chili-Spiced Grilled Halibut with Grilled-Corn Saucy Salsa

Gluten-Free, Nut-Free
- 4 ears of corn, shucked
- 5 tablespoons vegetable oil, plus some for drizzling
- Salt and freshly ground pepper
- 1 large red onion, chopped
- 3 garlic cloves, chopped
- 1 jalapeno, chopped
- 1 red bell pepper, cored, seeded, and chopped
- 1 tablespoon dark brown sugar [I used Splenda, mostly because it’s what I had on hand.]
- 1 1/2 cups vegetable or chicken stock or broth [I really prefer the flavor of stock over the flavor of broth.]
- 1 tablespoon chili powder (a palmful)
- 4 6-ounce 1-inch halibut fillets (1 1/2 pounds)
- 1/4 cup fresh cilantro leaves (a generous handful), chopped
- Juice of 2 limes

In a large bowl mix Lentil/Green puree, ketchup, wheat germ, salt, and onion powder
- 1/2 cup lentil or green puree
- 1 tbsp ketchup
- 1/4 cup wheat germ
- 1/2 tsp salt
- 1 tsp onion powder
- 1 lb lean ground beef
- 12 small soft dinner rolls (whole wheat)
- Optional Garnish: cheese, pickles, and/or ketchup
