Strawberry Feta Salad

In a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted
- 1 cup slivered almonds
- 1 head romaine lettuce, torn
- 1 pint fresh strawberries, sliced

- 2 cloves garlic, minced
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1/4 cup raspberry vinegar
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 1 cup vegetable oil
Southwestern Egg Rolls

Need to freeze for 4 hours before frying
- 2 tablespoons vegetable oil
- 1 skinless, boneless chicken breast half
- 2 tablespoons minced green onion
- 2 tablespoons minced red bell pepper
- 1/3 cup frozen corn kernels
- 1/4 cup black beans, rinsed and drained
- 2 tablespoons frozen chopped spinach, thawed and drained
- 2 tablespoons diced jalapeno peppers

Boil lentils in broth Reduce to med
- 2 cups vegi broth (more if you want more soupy)
- 1 cup red lentils (sorted / rinsed)
- 1 Tbs. coconut oil
- 1 med. onion, chopped
- 2 gloves garlic (or to taste)- I use 4
- 1/2 tsp. crushed red pepper flakes (or to taste)
- 1 tsp. ground cumin
- 1 tsp. ground tumeric
- 1/2 tsp. ground coriander
- 1 Tbs. tomato paste
- 1/2 cup organic coconut milk
- 2 tsp. fresh lime juice (or to taste)

1. Preheat oven to 350 degrees F (175 degrees C)
- ♦ 9 lasagna noodles
- ♦ 1 tablespoon olive oil
- ♦ 1 pound ground beef
- ♦ 1 pound bulk Italian sausage
- ♦ 1 (16 ounce) can sliced mushrooms drained
- ♦ 1 teaspoon garlic salt
- ♦ 1 teaspoon dried oregano
- ♦ 1/2 teaspoon dried thyme
- ♦ 1/4 teaspoon dried basil
- ♦ 4 (15 ounce) cans tomato sauce
- ♦ salt and pepper to taste

Pumpkin Soup

1. Cut pumpkin into 1/2-inch cubes
- 6 cups chicken stock
- 1 1/2 teaspoons salt
- 3 1/2 cups cubed fresh pumpkin
- 1 teaspoon fresh parsley
- 1 cup chopped onion
- 1/2 teaspoon chopped fresh thyme
- 1 clove garlic, minced
- 1/2 cup heavy whipping cream
- 5 whole black peppercorns
Murzycki Family Pancakes

We use this recipe all the time
- • 1 egg
- • 1 cup buttermilk or soured milk*
- • 2 tbsp. oil
- • 1 cup flour
- • 1 tbsp. sugar
- • 1 tsp. baking powder
- • ½ tsp. soda
- • ½ tsp. salt
- * To sour milk; mix 1 tbsp. lemon juice in measuring cup. Add enough milk to bring to 1 cup.
