Turkey Burger with Feta

1) Preheat the grill for medium high heat
- • 1 pound ground turkey
- • 1 cup crumbled feta cheese
- • 1/2 cup kalamata olives, pitted and sliced
- • 2 teaspoons dried oregano
- • ground black pepper to taste
Orange Smoothie

- 2 oranges, peeled and sectioned
- 1 frozen banana chunked
- 1/4 c orange juice
- 2 TBS yogurt
- 1 tsp vanilla
Coconut Fruit Dip

In a blender, combine the first four ingredients; cover and process for a minute or until smooth
- • 1 can (8 ounces) crushed unsweetened pineapple, undrained
- • ¾ cup milk
- • ½ cup (4 ounces) sour cream
- • 1 package (3.4 ounces) instant coconut cream pudding mix
- • Fresh pineapple, grapes and strawberries
Slow Cooker Beef Stew

1) Place meat in slow cooker
- • 2 pounds beef stew meat, cut into 1 inch cubes
- • 1/4 cup all-purpose flour
- • 1/2 teaspoon salt
- • 1/2 teaspoon ground black pepper
- • 1 clove garlic, minced
- • 1 bay leaf
- • 1 teaspoon paprika
- • 1 teaspoon Worcestershire sauce
- • 1 onion, chopped
- • 1 1/2 cups beef broth
- • 3 potatoes, diced
- • 4 carrots, sliced
- • 1 stalk celery, chopped
Chocolate Covered Cherry Cookies

1) In mixing bowl, cream together butter and sugar
- ♦ ½ cup butter softened
- ♦ 1 cup sugar
- ♦ 1 egg
- ♦ 1-1/2 teaspoons vanilla
- ♦ 1-1/2 cups all purpose flour
- ♦ ½ cup baking cocoa
- ♦ ½ teaspoon salt, divided
- ♦ ¼ teaspoon baking powder
- ♦ ¼ teaspoon baking soda
- ♦ 1 jar maraschino cherries
- ♦ 1 cup semi-sweet chocolate chips
- ♦ ½ cup sweetened condensed milk
Baked Apples

At first glance these cinnamon- and nutmeg-infused baked apples make the perfect dessert
- 6 - 6 large McIntosh or Jonagold apples
- 1/2 - 1/2 teaspoon ground cinnamon
- 1/4 - 1/4 teaspoon ground nutmeg
- 1/4 - 1/4 teaspoon ground cloves
- 6 - 6 tablespoons maple syrup
- 6 - 6 tablespoons salted butter, cut into small pieces
Chicken Ceasar Wrap

Toss sliced chicken with a tablespoon of dressing and set aside
- 3 tablespoons prepared Caesar dressing, divided
- 1 cup sliced grilled or poached skinless chicken breast
- 2 large (12-inch) whole wheat flour tortillas
- 1 cup shredded romaine lettuce
- 4 tablespoons shredded part-skim mozzarella cheese
- 2 roasted red peppers, well drained and sliced
Banana-Fudge Sundaes

Puree 3 bananas, 3/4 cup condensed milk, half and half, corn syrup, and lemon juice in processor until smooth
- 3 very ripe bananas, peeled, each cut crosswise into 4 pieces
- 1 14-ounce can sweetened condensed milk, divided
- 1 cup half and half
- 2 tablespoons light corn syrup
- 1 tablespoon fresh lemon juice
- 1/2 cup bittersweet chocolate chips
- 1 ripe banana, peeled, diced (for garnish)
Granola Bars

Oven at 350 in a 9 X 13 pan
- 2 cup oats
- 3/4 cup brown sugar ( I do more like 1/2 c.)
- 1/2 cup wheat germ (If you don't have it don't worry about it)
- 3/4 tsp group cinnamon
- 1 cup flour
- 3/4 raisins or cranberries or almonds (optional and whatever you want)
- 3/4 tsp salt
- 1/2 cup honey
- 1 egg
- 1/2 cup vegetable oil
- 2 tsp vanilla
Fabulous Chicken Fajitas

- ♦ 1 lb. skinless chicken breasts, cut into strips
- ♦ 2 TBS cornstarch
- ♦ 2 TBS lemon juice
- ♦ 1 tsp garlic powder
- ♦ 1 tsp salt
- ♦ ½ tsp pepper
- ♦ 1/8 tsp liquid smoke flavoring
- ♦ 2 TBS oil
- ♦ 1 cup green bell pepper strips
- ♦ 1 cup onion wedges, thinly sliced
- ♦ 1 cup salsa
- ♦ Warm flour tortillas
- ♦ Sour cream
