- 2 1/2 tsp baking powder
- 1/3 cup sugar
- 1 tsp salt
- 1 egg
- 1 cup milk
- 3 tablespoons melted butter or shortening
Chicken Taco Salad

Place shredded lettuce in bottom of platter or 2 1/2 quart bowl
- 2 c. shredded lettuce
- Tortilla chips
- 2-3 c. diced, cooked chicken
- 1 (4 oz.) can green chilies, undrained
- 1/2 tsp. chili powder
- 1/4 tsp. ground cumin
- 1/2 tsp. salt
- 1/4 tsp. garlic powder
- 1 (16 oz.) can kidney beans, drained
- 1 med. size can black beans
- 1 c. grated Cheddar cheese (may substitute Monterey Jack cheese)
- 1 lg. tomato, chopped
- 1 med. cucumber, peeled, seeded, and chopped
- 1/3 c. ripe olives, sliced
- 1 c. sour cream
- 1/2 c. salsa or taco sauce
Sweet Potato Casserole

1) Cook and mash sweet potatoes
- 6-8 * 6-8 medium sized sweet potatoes
- 1/2 * 1/2 stick butter
- 2 * 2 beaten eggs
- 1/2 * 1/2 cup sugar
- 1/4 * 1/4 tsp cinnamon
- 1/4 * 1/4 tsp nutmeg
- 3/4 * 3/4 tsp vanilla
- Topping
- 1/4 * 1/4 cup butter
- 3/4 * 3/4 cup brown sugar
- 3 * 3 TBS flour
- 1/2 * 1/2 cup pecans, chopped

Pumpkin Dip

In a large bowl, combine sugar and cream cheese; beat until well blended

Avocado Chutney

1. Combine avocado, corn, red pepper and onion in a medium sized bowl
- 2 large avocados
- 1/2 cup corn
- 1 small onion, finely chopped
- 2 red bell peppers, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup olive oil
- 4 cloves garlic, minced
- 2 lime, juiced
- 4 teaspoons cumin
- 4 teaspoons chopped oregano
- 2 teaspoons chili powder
- 2 tablespoons cilantro, diced
- sea salt and pepper to taste
Artichoke Chicken

Mix flour, salt and pepper; coat chicken in flour mixture and fry in 4 tbsp
- • 4-6 pieces of chicken fillets
- • ½ cup flour
- • ¼ tsp. salt and ¼ tsp. pepper
- • 1/3 cup dry white wine (Sauvignon Blanc is good)
- • 1 jar of Pastene sun dried tomatoes, in oil
- • 1 jar of artichoke hearts
- • Lemon
- • Pasta
Irish Soda Bread

1. Preheat oven to 325. Grease 9x5 loaf pan
- 3 cups all-purpose flour
- 1 TBS baking powder
- 1/3 c white sugar
- 1 tsp salt
- 1 tsp baking soda
- 1 egg, lightly beaten
- 2 c buttermilk
- 1/4 c butter, melted
Deb's Meatballs

1. In a bowl, add hamburg, eggs, bread, garlic, cheese and parsley
- ♦ 1 slice white bread per pound of hamburg (soaked in milk)
- ♦ 1 beaten egg for each pound of hamburg
- ♦ 1 garlic clove for each pound of hamburg
- ♦ ¼ cup parmesan cheese per pound
- ♦ 1 TBS parsley per pound
Acorn Squash Soup

1. In a large saucepan, saute the onion and celery in butter
- 1 small onion
- 1/4 cup chopped celery
- 2 tablespoons butter or margarine
- 2 tablespoons all-purpose flour
- 1 teaspoon chicken bouillon granules
- 1/2 teaspoon dill weed
- 1/4 teaspoon curry powder
- dash cayenne pepper
- 2 cups chicken broth
- 1 (12 ounce) can evaporated milk
- 3 cups mashed cooked acorn squash
- salt and pepper to taste
- 5 bacon strips, cooked and crumbled
