Grilled Chicken Salad with Seasonal Fruit

1.Preheat the grill for high heat
- 1 pound skinless, boneless chicken breast halves
- 1/2 cup pecans
- 1/3 cup red wine vinegar
- 1/2 cup white sugar
- 1 cup vegetable oil
- 1/2 onion, minced
- 1 teaspoon ground mustard
- 1 teaspoon salt
- 1/4 teaspoon ground white pepper
- 2 heads Bibb lettuce - rinsed, dried and torn
- 1 cup sliced fresh strawberries
Chicken Wild Rice Soup

1. In a large saucepan, combine the first nine ingredients
- 2 quarts chicken broth
- 1/2 pound fresh mushrooms, chopped
- 1 cup finely chopped celery
- 1 cup shredded carrots
- 1/2 cup finely chopped onion
- 1 teaspoon chicken bouillon granules
- 1 teaspoon dried parsley flakes
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- 1/4 cup butter or margarine
- 1/4 cup all-purpose flour
- 1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
- 1/2 cup dry white wine or additional chicken broth
- 3 cups cooked wild rice
- 2 cups cubed, cooked chicken
American Chop Suey

Cook and drain macaroni. Cook and drain hamburg
- • 1-lb box elbow macaroni
- • 2 (16 oz.) crushed tomatoes
- • 1 cup diced celery
- • 1 cup diced peppers
- • 1 cup diced onions
- • ¾ cup olive oil
- • 1 tsp. crushed fennel
- • 1 tsp. oregano
- • 2 tsp. parsley
- • 5 cloves crushed garlic
- • 2 lbs. ground hamburg
Taco Seasoning

1) Mix all ingredients together and stir in an airtight container
- 6 TBS chili powder
- 2 TBS cumin
- 4 TBS paprika
- 3 TBS onion powder
- 1 TBS garlic powder
- 1 tsp cayenne pepper
Kiwi Strawberry Smoothie

Blend until smooth
- 3 peeled kiwis
- 1 cup frozen banana slices
- 3/4 cup pineapple juice
- 1/2 cup frozen strawberries
Coconut Rice

Rinse rice one or two times to remove excess starch
- • 1 Cup of Jasmine Rice
- • 1 Cup of Coconut Milk
- • 1/2 Cup of water
- • 1 T Butter or oil
- • Pinch of salt
Dried Tomato Spread

In medium skillet, cook garlic in oil until light brown
- • 1 to 2 cloves garlic, minced
- • 1 tbsp. olive oil
- • 1/3 cup dry white wine
- • ½ cup dried tomatoes, snipped (not oil packed)
- • 1 (8 oz.) cream cheese, softened
- • 1/3 cup fresh basil
- • 3 tbsp. grated Parmesan cheese
- • French bread, sliced & toasted, or crackers
Cinnamon Baked Apple Pancake

Heat oven to 400; in 12x8 baking pan, melt ¼ cup butter in oven
- Pancake:
- • ¼ cup butter
- • 1 cup all purpose flour
- • 2 cups milk
- • 3 eggs
- • ½ tsp salt
- Filling:
- 2 tbsp. butter
- 2 tsp cornstarch
- 1 tbsp. cold water
- 1/3 cup brown sugar
- ½ tsp cinnamon
- 2 medium cooking apples, cored and sliced
Cheddar Potato Soup

1. Using a medium sized stock pot bring water to a boil, add potatoes and cook until tender
- 2 cups water
- 2 cups peeled and cubed red potatoes
- 3 tablespoons melted butter
- 1 small onion, chopped
- 3 tablespoons all-purpose flour
- salt and pepper to taste
- 3 cups milk
- 1/2 teaspoon white sugar
- 1 cup shredded Cheddar cheese
- 1 cup diced ham
Pizza Dip

Preheat oven to 350°. Stir together first 5 ingredients; spoon into a 9-inch pie plate
- • 1 (8-oz.) package cream cheese, softened
- • ½ cup sour cream
- • 1 tsp. dried oregano
- • 1/8 tsp. garlic powder
- • 1/8 tsp. crushed red pepper
- • ½ cup pizza sauce
- • ½ cup chopped pepperoni
- • ¼ cup chopped onion
- • ¼ cup chopped green pepper
- • ½ cup (2 oz.) shredded mozzarella cheese
