Summer Salad

1.Place the chicken breasts and Italian dressing into a resealable plastic bag
- 3 (6 ounce) skinless, boneless chicken breast halves
- 1 cup Italian-style salad dressing
- 1 Granny Smith apple, cored and diced
- 2 tablespoons lemon juice
- 1 head romaine lettuce, chopped
- 1 avocado, diced
- 4 ounces feta cheese, crumbled
- 1 1/2 cups diced fresh strawberries
- 1 cup dried cranberries
- 3/4 cup balsamic vinaigrette, or to taste
Chicken Broccoli Stirfry (With Linguine)

Cook linguine according to package instructions, drain and keep warm
- 8 ounces whole wheat linguine
- 3/4 cup low-sodium chicken broth
- 3 tablespoons soy sauce
- 1 teaspoon rice wine vinegar
- 1/4 teaspoon red pepper flakes
- 2 teaspoons cornstarch
- 2 tablespoons expeller-pressed canola oil, divided
- 1 pound Boneless Skinless Chicken Tenderloins
- 3 cloves garlic, minced
- 2 teaspoons minced peeled fresh ginger
- 3 cups small fresh broccoli florets (from about 1 large crown)
- 1 carrot, peeled and cut into thin strips
Turkey Meatloaf with Sun-Dried Tomatoes

- • 1/2 cup plain bread crumbs
- • 1/3 cup chopped fresh flat-leaf parsley

- 1/2 cup parsley
- 1/2 cup cilantro
- 1 Tbs apple cider vinegar
- 1 Tbs olive oil
- 1 Tbs lime juice
- 1 tsp cumin
- 1 tsp salt
- Jalapeno to taste.
