1) Cut chicken into thin strips 1 ½ -2 inches long

Banana Pumpkin Smoothie

Blend until smooth
- 1 cup low-fat vanilla yogurt
- 3/4 cup canned pumpkin, chilled
- 1/2 cup ice cubes
- 1/3 cup fresh orange juice
- 1 TBS brown sugar
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1 ripe banana, sliced and frozen

Chili

Cook bacon until crisp. Add onions and cook until soft
- • 6 slices bacon – chopped
- • 1 cup onion – diced
- • 2 lb. hamburg
- • 1 large can kidney beans (not packed in water)
- • 1 lb. can tomatoes
- • 1 tbsp. sugar
- • 1 tbsp. vinegar
- • 1 tbsp. flour
- • 1~ 3 tbsp. chili powder (personal taste)
- • 1 tbsp. salt
Black Bottom Banana Cream Pie

1) Preheat oven to 425. Let pie crust stand at room temperature for 15 minutes
- 1 - 1 refrigerated crust
- 1 - 1 container (12oz) frozen whipped topping, thawed, divided
- 1 - 1 pkg (6oz) semi-sweet chocolate morsels
- 1 1/2 - 1 1/2 cups milk
- 1 - 1 pkg (5.1oz) vanilla instant pudding and pie filling
- 2 - 2 medium bananas
- - Strawberries for garnish
Hearty Stir-Fry Salad

1.In a bowl, combine the first seven ingredients
- 3/4 cup sherry or chicken broth
- 1/3 cup soy sauce
- 1 small onion, sliced
- 2 garlic cloves, minced
- 1 1/2 teaspoons ground ginger
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon pepper
- 1 pound boneless beef top round steak, cut into 2-inch strips
- 3/4 pound skinless, boneless chicken breast halves - cut into 1/2 inch cubes
- 4 teaspoons vegetable oil, divided
- 3 medium carrots, julienned
- 1 cup fresh broccoli florets
- 1 medium green pepper, julienned
- 1 medium onion, thinly sliced
- 1 cup sliced fresh mushrooms
- 1/2 cup minced fresh cilantro
- 12 cups torn mixed salad greens
- 3 medium navel oranges, peeled and cut into 1/2 inch pieces
Southwest Chicken

1. In a large skillet, heat oil over medium high heat
- • 1 tablespoon vegetable oil
- • 4 skinless, boneless chicken breast halves
- • 1 (10 ounce) can diced tomatoes with green chile peppers
- • 1 (15 ounce) can black beans, rinsed and drained
- • 1 (8.75 ounce) can whole kernel corn, drained
- • 1 pinch ground cumin

- Preparation:
- • 8 ounces miniature marshmallows (4 cups not packed, or half of a 16-ounce bag)
- • 1 pound powdered sugar (4 cups), plus extra for dusting
