Turkey Stock

Place the neck, heart, and gizzard in a medium saucepan, reserving the liver until later
- The neck, gizzard, and liver from the turkey
- 4-6 cups chicken or turkey broth
- 2 bay leaves
- 1/2 onion
- 1 carrot
- 1 stalk celery
Broccoli Cheese Casserole

Melt butter, saute celery and onion
- 1/4 c. butter
- 1/3 c. chopped celery
- 1/3 c. chopped onion
- 1 pkg. (10 oz.) frozen chopped broccoli, thawed
- 1 can (10 oz.) cream of mushroom soup
- 1/2 c. uncooked quick rice
- 1 jar (4 oz.) processed cheese spread
Shredded Chicken Sandwiches

Mix all ingredients into pot, heat, and add chicken broth until desired consistency
- 1 Chicken, cooked, de-boned, and shredded (or shredded chicken breasts or 1 50 oz can shredded chicken)
- 1 sleeve of Ritz crackers, crushed
- 1 can Cream of Chicken Soup
- 1 can Cream of Celery Soup
- Chicken stock or broth
Tuna Macaroni Salad

Cook pasta. Chop celery and onion
- 3 cups macaroni (I use shells)
- 1/2 cup mayonnaise
- 1 onion, chopped
- 2 stalks celery, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 package tuna, drained
Salmon in fillo

Take a piece of skinned salmon fillet and cut into 1 inch strips across the fillet
- Salmon fillets
- Fillo dough
- Fresh dill
- Old bay seafood seasoning
- butter-flavored cooking spray
Chicken and Dumplings

For bigger groups I used the meat from 2 chickens and quadrupled the recipe
- Dumplings:
- 2 C Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1 C whole Milk
- 4 Tbsp Vegetable Oil
- Dumpling Sauce:
- 3 Tbsp Butter
- 4 Tbsp Flour
- 1/4 tsp Salt
- 1 C Whole Milk
- 2 Chicken Bouillon Cubes (crumbled)
- 1/2 tsp sugar
- 1/2 -3/4 C Dumpling Cooking Liquid (after dumplings have been cooked)
Turkey Jambalaya

Grill or fry sausage until almost cooked through
- 1 1/2 pounds hot turkey sausage
- 3 stalks celery, chopped
- 1 onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, pressed
- 1 (14.5 ounce) can Italian-style diced tomatoes, undrained
- 2 cups low-sodium chicken broth
- 1 1/2 cups uncooked long-grain white rice
- 1 bay leaf
- 2 teaspoons Cajun seasoning
Rocky Road Candy

1. In a 2-quart saucepan, combine the sugar, milk, and light corn syrup
- 1/2 cup granulated sugar
- 1/2 cup evaporated milk
- 1 tablespoon light corn syrup or (Karo Syrup)
- 1 (12-ounce)package milk chocolate chips
- 1 cup miniature marshmallows
- 1 cup pecans, chopped coarsely
Meatball Stew

In a medium bowl, combine venison (or beef) bread crumbs, herbs, egg, and garlic
- 2 pounds ground venison (or beef)
- 1/2 cup bread crumbs
- 1/2 teaspoon dried basil
- 1 teaspoon dried parsley
- 1 egg
- 1 clove garlic, minced
- 2 tablespoons canola oil
- 3 packets onion soup mix
- 1 can French onion soup
- 12 cups water
- 3 large potatoes, peeled and quartered
- 2-3 medium carrots, cut in chunks
- 1 cup celery, chopped
- Roux (1/2 cup flour, 1/2 cup butter)
Oreo Pudding

1. Break up cookies, put 1/2 on bottom of preferred dish and save other 1/2 for topping
- 1 (14 ounce) bag Oreo cookies
- 2 (3 1/2 ounce) packages French vanilla instant pudding
- 3 cups milk
- 1 cup powdered sugar
- 1 (8 ounce) package cream cheese
- 1/4 cup butter or 1/4 cup margarine (1/4 cup)
- 1 (12 ounce) container Cool Whip
