Taco seasoning

Mix together, add to meat
- 1 tablespoon chili powder
- 1/2 teaspoon paprika
- 1-1/2 teaspoons cumin
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon adobo seasoning
- 1/2 teaspoon cayenne pepper or crushed red flakes
Corned Beef Stroganoff

Cook onions and mushrooms in butter in skillet until soft
- 1 can corned beef
- 1 cup chopped onion
- 1 packet stroganoff mix
- 1 16 oz sour cream
- 4 tablespoons butter
- sliced mushrooms
- 1 lb package of egg noodles
Taco Pasta Toss

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente
- Salt and pepper
- 1 pound penne rigate pasta, regular or whole grain
- 1 tablespoon extra virgin olive oil
- 1 pound ground beef sirloin
- 1 large onion, chopped, divided
- 1 large jalapeño pepper, halved, seeded if desired and thinly sliced crosswise
- 4 cloves garlic, finely chopped
- 2 tablespoons chili powder
- 1 1/2 teaspoons ground cumin
- 1 tablespoon ground coriander
- 1/4 cup tomato paste
- One bottle beer (12 ounces) or 1 1/2 cups chicken stock
- 2 cups shredded cheddar, Monterey Jack or any Mexican semi-soft cheese
- 2 small plum tomatoes, seeded and chopped
- 1/4 head iceberg lettuce or 1/2 small heart of romaine lettuce, chopped
Chili

Cook first 3 ingredients in a Dutch oven over medium heat, stirring until meat crumbles and is no longer pink

- 1 medium onion, chopped
- 3 to 4 garlic cloves, minced
- 2 (15-ounce) cans pinto beans, rinsed and drained
- 3 (8-ounce) cans tomato sauce
- 1 (12-ounce) bottle dark beer
- 1 (14 1/2-ounce) can beef broth
- 1 (6-ounce) can tomato paste
- 1 (4.5-ounce) can chopped green chiles
- 2 tablespoons chili powder
- 1 tablespoon Worcestershire sauce
- 2 teaspoons ground cumin
- 1 to 2 teaspoons ground red pepper
- 1 teaspoon paprika
- 1 teaspoon hot sauce
- Garnish: pickled jalapeño pepper slices

- 1 package (16 ounces) frozen sliced peaches
- 3/4 cup tequila
- 1/4 cup triple sec
- 1/4 cup fresh lime juice (from 3 limes)
- 1/4 cup sugar
- 1 cup ice cubes

Chicken Paprikash

Cook chicken of your choice (I like to cook a whole chicken in the crockpot and shred it)
- Dumplings:
- Cooked chicken of your choice
- 2 cups onion
- 1 stick butter
- 4 tbsp. Hungarian paprika (I use half Hungarian and half smoked)
- 1 quart (4 cups) half & half
- 16 oz. sour cream
- 1/2 cup flour
- Seasoning salt and pepper
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 4 tbsp vegetable oil

- 6 burrito sized tortillas
- 1/2 cup onion
- 1 can refried beans
- 1 small can chopped green chilis
- 1 can red enchilada sauce
- 1 can green chili enchilada sauce
- 1 small can salsa verde sauce
- Shredded cheese (colby jack, cheddar)

- 3 cups flour
- 3 tablespoons white sugar
- 3 teaspoons baking powder
- 1 1/2 teaspoons baking soda

- 1/2 cup milk
- 3 eggs
- 1/2 cup butter, melted
