Chicken Casserole

- 2 cups cooked chicken
- 1 box Uncle Ben's Wild Rice-cooked, follow directions on box
- 1 can Cream of Celery soup
- 1 cup mayonnaise
- 1 can water chestnuts
- 2 tbs chopped onion
- 2 tbs green pepper
- 2 tbs piminetos
Onion Dip

1. Combine all ingredients and mix well
- 3 cups shredded Swiss cheese
- 3 cups sweet onions, chopped
- 2 1/2 cups mayonaise
- Garlic, salt to taste
Fiesta Brisket

Serve spicy Fiesta Brisket with a squirt of fresh lime juice and a sprig of cilantro
- 4 guajillo chiles
- 4 cups boiling water
- 1/2 cup cider vinegar
- 1/2 cup low-sodium chicken broth
- 8 garlic cloves
- 1 medium onion, chopped
- 3 fresh thyme sprigs
- 2 teaspoons dried Mexican oregano leaves*
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground allspice
- 3 teaspoons salt, divided
- 2 teaspoons ground pepper
- 1 (4- to 5-lb.) beef brisket flat
- 8 cups hickory wood chips
- 2 large limes, cut into wedges
- Garnish: fresh cilantro sprig
Cheddar Potato Soup Recipe

Here's a recipe I created as an alternative to plain potato soup
- 1 large onion, chopped
- 3/4 cup chopped celery
- 1/4 cup butter
- 5 cups cubed peeled potatoes
- 3 cups water
- 3 cups 2% milk, divided
- 4 teaspoons chicken bouillon granules
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup all-purpose flour
- 4 cups (16 ounces) shredded cheddar cheese
- 1/2 pound sliced bacon, cooked and crumbled
Chicken and Spaghetti Casserole

- 1/2 package spaghetti
- 3 cups chicken, cooked
- 1/2 medium onion, chopped
- 3/4 green pepper, chopped
- 3 tbs pimientos
- 1 (10oz) can Mushroom soup
- 1 pound shredded cheddar cheese
- 1 (14oz) can chicken broth
- 1 package frozen peas
- 1 tsp salt
- 1/2 tsp pepper
Double Divinity

Making two syrups at different stages of density is the secret to this divinity recipe, then beating the two syrups...
- 2 cups sugar
- 2/3 cup water
- 1/2 cup light corn syrup
- 2 egg whites, slightly beaten
- 1 teaspoon vanilla
- Dash of salt
Lemon Crinkle Cookies

1. Preheat oven to 350F. Grease light color baking sheet with cooking spray
- 1/2 cup butter softened
- 1 cup sugar
- 1/2 tsp vanilla
- 1 egg
- 1 fresh lemon juice & 1 tsp lemon zest
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1 1/2 cups flour
- 1/2 cup powdered sugar
Crabmeat Spread

- 3 scallions, finely chopped
- 2 tbs mayonnaise
- 2 tbs chile sauce
- Dash of Worchestershire sauce

- ESPRESSO SPREAD:
- 4 ounces cream cheese, cubed
- 1 tablespoon sugar
- 1/2 teaspoon instant coffee granules
- 1/2 teaspoon vanilla extract
- 1/4 cup miniature semisweet chocolate chips
- MUFFINS:
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2-1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup milk
- 2 tablespoons instant coffee granules
- 1/2 cup butter, melted
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup miniature semisweet chocolate chips
Mushroom Turnovers Recipe
