Orange Pecan Biscotti

Yummy, easy biscotti. Can be dipped in chocolate, or not
- 2 2/3 cups all purpose flour, plus more for shaping
- 1 1/2 cups sugar
- 2 tsp baking powder
- 3/4 tsp salt
- 1 or 2 oranges to zest (a scant 1/4 cup lightly packed)
- 1 cup coarsely chopped pecans
- 3 larges eggs, at room temperature
- 5 tbs olive oil
- 2 tbs fresh orange juice
- 1 tbs orange liqueur, such as Grand Marnier
Zucchini Chunky Fries

Try with sweet chili sauce
- 4 Large green zucchinis, cut lengthwise and into 4" pieces
- 2 organic eggs, beaten
- 1-2 cups panko bread crumbs
- Dried spices of choice: Garlic salt, oregano, pepper etc

Mom's (Agnes) recipe
- Small rack of ribs
- 6 - 8 beets with stems left on
- 1/4 lb green beens
- 2/3 of very small cabbage
- 1 carrot
- 1 small coffee cream
- 1/2 can tomato soup
- 2 pieces celery
- 1/2 cup peas
- 1 1/2 tablespoons flour
Burger - Quinoa Veggie

- Tahini Sauce:
- 6 tbsp (90ml) Tahini
- 1/4 cup Water
- 2 tbsp Mayo
- 1 tbsp Lemon Juice
- Salt and Pepper
- Veggie Burger:
- 1/2 cup Quinoa, rinsed and drained
- 1/2 cup grated zucchini
- 1/2 cup grated Carrot
- 1/2 cup chopped Leak (white part only)
- 1 clove garlic, chopped
- 1/4 cup Olive oil
- 1 egg, lightly beaten
- 1/4 cup bread crumbs
- Toppings:
- 4 Hamburger buns
- 1 raw Beet, peeled and grated
- Pea Sprouts, to taste

- 1 cup Rolled Oats
- 1/2 cup Butter

- 1 cup Raisins or Dates
- 1 tsp Vanilla
- 1 cup all purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
Toblerone Chunky Bittersweet Shortbread

- 1 cup fruit or super fine sugar
- 3 1/2 cups all purpose flour
- 1/2 cup cornstarch
- 1 100g Toblerone Swiss Milk chocolate chopped
- 1 cup pecans, toasted, coarsely chopped
- Sifted icing sugar

- 1/3 Cup goat Feta diced or crumbled
- 1/4 Cup Sunflower seeds, hulled, roasted
- 1/8 Cup Fresh Parsley chopped
- 3 Tablespoon Fresh Mint Leaves chopped
- 2 Tablespoon Mirin
- 2 Tablespoon Cider vinegar
- 1/2 Teaspoon Kosher salt, plus more for avocado
- 1/4 Teaspoon Freshly ground black pepper, plus more for avocado
- 1/2 Avocado, pitted and diced
- 1/4 Teaspoon fresh lemon juice

Summertime Salad

- Dressing:
- 1 head lettuce
- 1 cucumber, thinly sliced
- 1 can pineapple
- 1 can mandarin oranges
- 3 green onions, thinly sliced
- 1/4 cup orange juice
- 1/2 cup salad oil
- 2 tablespoons sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 2 tablespoons red vinegar
