Muffins - Oatmeal Orange

Tip - for larger muffins, fill to almost top of muffin tin - make sure to grease top of muffin tin.

Ingredients
- 1/2 cup Orange juice
- 1/2 cup boiling Water
- 1 cup Rolled Oats
- 1/2 cup Butter
- 1/2 cup White Sugar
- 1/2 cup Brown Sugar
- 2 Eggs
- 1 cup Raisins or Dates
- 1 tsp Vanilla
- 1 cup all purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt

Preparation
Step 1
Combine orange juice and water. Add rolled oats and soak for 15 minutes.
Meanwhile, cream butter and sugars. Beat eggs and stir in oat mixture. Stir in raisins/dates and vanilla.
Add flour, baking powder, baking soda and salt.
Stir until moistened. Pour into well greased muffin cups.
Bake at 375 degrees for 20 minutes
