Kale and Quinoa Salad

Salad has a Berry and Poppy Seed dressing
- 2/3 cup quinoa
- 1 cup almonds sliced (or favourite nuts)
- 1 1/2 cups Kale and/or baby spinach
- 1 1/2 cup fresh blueberries
- 1 1/2 cups fresh raspberries
- 2 medium avocados ripe, peeled, pitted and diced
- 2/3 cup crumbled feta
- 1/4 cup olive oil
- 1/4 cup vegetable oil
- 1 tsp lime zest
- 3 1/2 tbsp freshly squeezed lime
- 1 tbsp agave nectar
- 1 tsp dijon mustard
- 1/4 tsp salt
- 2 tsp poppy seeds
Orange Sponge Cake

- 6 Egg whites (3/4 cup)
- 6 Egg yokes
- 1 3/4 cups sifted all purpose Flour (sift before measuring)
- 1/4 teaspoon Salt
- 1 1/2 cups granulated Sugar
- 6 tablespoons fresh Orange juice
- 1 tablespoon freshly grated orange peel
- Confectioner's sugar
Chocolate Chunk Shortbreads

Combines the great taste of shortbread with chocolate chunks
- 2 cups salted butter, at room temperature
- 1 cup fruit sugar
- 3 1/2 cups all purpose flour
- 1/2 cup rice flour (can substitute pastry flour)
- 8 oz bittersweet or semisweet chocolate cut into 1/2" chunks
- 1 cup pecans, toasted and cut into 1/2" chunks
- 1/3 cup sifted icing sugar

- 1.2 kg potatoes, peeled and cut into rough chunks
- 6 carrots peeled
- 6 parsnips, peeled and halved lengthways
- Sea salt and ground black pepper
- Olive oil, a few knobs of butter or fat from your Turkey/goose
- Rosemary, a few sprigs fresh
- 1 bulb of garlic
- 1 lemon zest
- 2 Clementines zest
Salmon with Ginger Lime butter

In food processor or by hand, cream butter, ginger and lime juice and rind
- 500 grams salmon fillet
- 15 ml olive oil
- 25 ml butter
- 5 ml ground ginger, or
- 15 ml fresh ginger, finely chopped
- 1/2 lime, juice and rind, grated
- Pinch of salt
- Pinch of pepper
Chocolate Toffee Chip Cookies Browned Butter Milk

Very nice and chewy. Don't cook too long or they become quite crisp
- 1 3/4 cups unbleached all-purpose flour (8 3/4 ounces)
- 1/2 teaspoon baking soda
- 14 tablespoons (.88 of a cup)unsalted butter (1 3/4 sticks)
- 1/2 cup granulated sugar (3 1/2 ounces)
- 3/4 cups packed dark brown sugar (5 1/4 ounces) (see note)
- 1 teaspoon table salt
- 2 teaspoons vanilla extract
- 1 large egg
- 1 large egg yolk
- 1-1/2 cups Heath Toffee Bits*
- 1-1/2 cup Hershey's Milk Chocolate Chips*
- Optional: (substitute1 1/4 cups semisweet chocolate chips or chunks and, if desire, add 3/4cup chopped pecans or walnuts, toasted (optional)
