- Date Filling:
- 1 lb (500 grams) dates, chopped
- 1 cup cold water
- 1 Orange, peel grated
- 4 tbls orange juice
- 2 teaspoons lemon juice
- Shortbread Base:
- 1 1/2 cups flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp salt
- 1 cup butter
- 1 cup brown sugar
- 1 1/2 cups rolled oats (not instant)
Jerk Shrimp with Gingery Pineapple Salsa

Cook Jasmine rice to server with Shrimp
- 1 20oz can crushed pineapple, drained
- 2 tablespoons minced red onion
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon grated peeled fresh ginger
- 1 jalapeno pepper, seeded and minced
- 1 teaspoon honey
- 1 pound medium shrimp, peeled and deveined
- 1 tablespoon jerk seasoning
- 2 teaspoons canola oil
Peach Cake

- 1 1/2 c All Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- Pinch Nutmeg
- 1/2 c Butter - softened
- 3/4 c packed Brown Sugar
- 2 Eggs
- 1 tsp Vanilla
- 2/3 cup Sour Cream
- 2 firm ripe Peaches, peeled, pitted and cut in 6 pieces
- 1 tbsp Icing Sugar

- Crust:
- 1 cup flour
- 1/2 cup butter
- 1/4 cup sugar
- Pinch of salt
- Topping:
- 1 cup sugar
- 2 tsp flour
- 1/4 tsp baking powder
- 2 beaten eggs
- juice of 1 lemon (about 4 tbl)
Chicken pesto meatballs with peppers and greens

- 450 g ground chicken
- 1/3 cup panko bread crumbs
- 1/4 cup + 2 tbsp jarred pesto (such as PC Splendido Basil Pesto)
- 1/2 teaspoon salt (optional)
- 2 tablespoons olive oil
- 1 sweet yellow pepper , seeded and coarsely chopped
- 3 cloves of garlic , finely grated or pressed
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- 1/2 teaspoon pepper

- 2 tablespoons reduced sodium soy sauce
- 2 tablespoons reduced fat creamy peanut butter
- 1 tablespoon coarsely chopped fresh ginger
- 1 tablespoon packed brown sugar
- 1/2 head savoy cabbage, thinly sliced (about 5 cups)
- 1 red bell pepper, cut into thin strips
- 1 cup match stick cut carrots
- 1/4 cup chopped fresh cilantro
- 2 scallions, thinly sliced
