- 2 tablespoons curry powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/2 teaspoon marassala
- 1 medium onion
- 2 garlic gloves
- 2 green onion stems
- 1/4 hot pepper, jalapeno
- 2 pound boneless chicken
- pinch garlic powder
- pinch onion powder
- 2 tablespoons soy sauce
- 2 medium potatoes
Phyllo Triangles

Delectable and easy to make
- Spinach-Cheese Filling:
- 10 sheets phyllo pastry
- 1/2 cup butter, melted
- 1 tablespoon olive oil
- 2 tablespoon minced onion
- 2 gloves garlic
- 1 cup ricotta cheese (or use feta)
- 3/4 cup chopped, drained cooked spinach
- 1/3 cup freshly grated parmesan cheese
- 1/2 teaspoon grated lemon rind
- pinch each salt, pepper and nutmeg
- Mushroom Sausage Cheese Filling:
- 1/2 cup butter, melted
- 2 tablespoon olive oil
- 2 tablespoon minced onion
- 2 gloves garlic
- 1 cup ricotta cheese (or use feta)
- 2 1/2 cups chopped mushrooms
- 1/4 teaspoon pepper flakes
- 1/2 lb crumbled hot Italian sausage
- 1/3 cup freshly grated parmesan cheese
- 1/2 teaspoon grated lemon rind
- pinch each salt and pepper
Thai Chicken Coconut Curry

Add some vegetables goodness to the curry by stirring in each of a red and yellow bell pepper, thinly sliced along
- 1 cup light coconut milk
- 3 scallions, thinly sliced
- 2 tablespoons thai green curry paste
- 2 cups reduced sodium chicken broth
- 1 tablespoon Asian fish sauce
- 2 teaspoons packed light brown sugar
- Pinch salt
- 3/4 lb chicken cutlets, cut into long thin strips
- 1 cup fresh cilantro leaves
- 3 cups hot cooked jasmine rice
Cranberry Oatmeal Cookies

Nice Cranberry, Pecan, Coconut, Oatmeal cookie with chunks of white chocolate
- 3/4 cup unsalted butter, room temp.
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 large egg, room temp.
- 1 tbs corn syrup
- 1 tsp pure vanilla extract
- 1 3/4 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup dried cranberries
- 1/2 cups steel cut oats
- 1/2 cup pecan pieces slightly toasted
- 1/2 cup coconut slightly toasted
- 3/4 cup white chocolate coarsely chopped
Spicy Sweet Potato

- Batter:
- 1 cup butter
- 1 cup sugar
- 1 cup brown sugar
- 3/4 cup cocoa
- 3 large eggs
- 1 cup flour
- 1 1/2 teaspoon baking powder
- 1 1/2 teaspoon vanilla
- 1 tablespoon kahlua
- Icing:
- 1/2 cup butter
- 1 cup icing sugar
- 2/3 cup cocoa
- 1 teaspoon vanilla
- 1 tablespoon milk
- 2 tablespoon kahlua
- 1-2 tablespoon hot coffee
