Buffalo Chicken Quesadillas

1. Combine blue cheese, sour cream and scallions in bowl
- 4 oz blue cheese, crumbled (1 cup)
- 1/4 cup sour cream
- 2 scallions, sliced thin
- 3 T unsalted butter
- 1 1/2 lbs boneless, skinless chicken breasts, trimmed and cut into 1" thick strips
- 1/3 cup hot sauce
- 4 10" flour tortillas
- 1 T vegetable oil
The Best Tuna Salad

1. Marinate Tuna. Place tuna in fine mesh strainer and press dry with paper towels
- 3 5oz cans solid white albacore cans of tuna (can also be made with 2 cans)

1. Bring potatoes, 2 T salt, and enough water to cover by 1" to boil in large saucepan over high heat
- 2 lbs red potatoes, cut into 3/4" pieces

- 2 T white vinegar
- 1/4 cup light mayonnaise
- 1/4 cup nonfat Greek yogurt
- 1 1/2 T sweet pickle relish
- 1 T Dijon mustard

Vegetable Beef Soup Gluten Free

1. In large dutch oven, over medium heat warm oil
- 1 tbsp vegetable oil
- 1.5 pounds round steak cut into 1 inch pieces or 1.5 pounds boneless beef ribs
- 1 yellow onion chopped
- 4 cloves garlic minced
- 2 chopped carrots
- 1 bell pepper
- 4 cups beef stock
- 3 cups tomato juice
- 1 can 14.5 oz diced tomatoes with juice
- 1 tsp chili powder
- 1 tsp soy sauce gluten free
- 1 tsp Worcestershire sauce gluten free
- 1/2 tsp dried thyme
- 1 bay leaf
- 1 1/4 tsp sa;t
- Pepper to taste
- 1.5 cups corn kernels fresh or frozen or canned
- Parmesan cheese for topping

- 2 pounds ground beef
- 3 cans red gold chili beans
- 3 diced onions
- 1 can tomato sauce
- 1/2 tsp salt
- 1 tbsp chili powder
- 1/2 tsp garlic powder

- 1/4 tsp crushed red pepper
- 2 dried peppers
