Almond Flour Biscuits

1. Preheat oven to 350 degrees
- 2 1/2 cups blanched almond flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/8 tsp baking powder
- 3 tbsp butter, melted (or melted coconut oil)
- 1 tbsp pure honey (I prefer sage honey due to its mild flavor)
- 3 tbsp cultured buttermilk (or almond milk)
- 2 large eggs
Mexican Pulled Pork (Carnitas)

1. Move the oven rack to lower middle and head oven to 300
- 1 3.5 to 4 pound boneless pork butt, fat cap trimmed to 1/8" thick, cut into 2" chunks

Sichuan Stir-Fried Pork in Garlic Sauce

1. Whisk all sauce ingredients together in bowl
- Sauce:
- 1/2 cup chicken broth
- 2 tbsp sugar
- 2 tbsp soy sauce
- 4 tbsp chinese black vinegar
- 1 tbsp sesame oil
- 1 tbsp chinese rice wine or dry sherry
- 2 tsp ketchup
- 2 tsp fish sauce
- 2 tsp corn starch
- Pork:
- 12 oz boneless country-style pork ribs, trimmed
- 1 tsp baking soda
- 1/2 cup cold water
- 2 tsp chinese rice wine or dry sherry
- 2 tsp cornstarch
- Stir-Fry:
- 4 minced garlic cloves
- 2 scallions, white part minced, green parts sliced thin
- 2 tbsp asian garlic chili paste
- 4 tbsp vegetable oil
- 6 oz shiitake mushrooms or portobello mushrooms stemmed and sliced thing
- 2 cans water chestnuts

1. Melt the butter in a large Dutch oven over medium-low heat until foaming
- 4 T unsalted butter
- 1 large shallot, chopped fine
- 3 lbs butternut squash (about 1 large), cut in half lengthwise, and each half cut in half widthwise, seeds and strings scraped out and reserved (about 1/4 cup)
- 6 cups water

- 1/2 cup heavy cream
- 1 tsp dark brown sugar
- pinch freshly grated nutmeg

1. Combine avocados, sour cream, heavy cream in a food processor and combine until smooth
