Tuna Casserole for Alex and Max

Preheat oven to 400°F. Place a large pot of water over high heat and bring up to a boil to cook the pasta
- 1/2 bag no yolk noodles
- 1 tablespoon EVOO - Extra Virgin Olive Oil
- 1 tablespoon butter
- 2 garlic cloves, grated
- 1 small onion, chopped
- 2 tablespoons flour
- 1 cup chicken stock
- 1 cup milk or half-and-half
- Salt and ground black pepper
- 1/2 cup grated Parmigiano Reggiano, plus some for topping
- 2 6-ounce cans tuna in water, drained
- Pro Tip: Add 1 15-ounce can cannellini beans, drained
Whipped Potatoes

1. Put potatoes in colander and rinse under cold running water for 1 minute or until it runs clear
- 4 lbs russet potatoes peeled and cut into 1" pieces
- 1 1/2 cups whole milk
- 8 tbsp unsalted butter cut into pieces
- 2 tsp salt
- 1/2 tsp pepper
Chicken Parmesan

1. In a shallow pan, beat egg with a dash of milk until well-blended
- 2 large boneless, skinless chicken breasts
- 1 or 2 large egg(s)
- 1/2 cup bread crumbs (regular bread crumbs work fine, but I prefer panko bread crumbs if you can find them)
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated mozzarella cheese
- 1/2 teaspoon dried basil
- salt and pepper to taste
- 1/4 teaspoon dried oregano
- 1/3 cup virgin olive oil
- 1 1/2 cups tomato or marinara sauce
- 1 cup of all-purpose flour
No-Bake Strawberry Icebox Cake

Take out a few of the best-looking strawberries and set them aside for the garnish
- 2 pounds fresh strawberries, washed
- 3 1/4 cups whipping cream, divided
- 1/3 cup confectioners sugar
- 1 teaspoon vanilla
- 1/2 teaspoon rosewater (optional)
- 4 sleeves (about 19 ounces, or 24 to 28 whole crackers) graham crackers
- 2 ounces dark chocolate, finely chopped
Bacon Salisbury Steak

Mix ingredients together and shape into patties
- 2 eggs
- 1 cup bread crumbs from stuffing mix
- 2 tbsp 2% milk
- 1 tsp salt
- 1/2 tsp pepper

- 2 tsp parsley

- 6 strips bacon

- 8 ounces Monterey Jack cheese, shredded (2 cups), room temperature
- 4 ounces Colby cheese, shredded (1 cup), room temperature
- 2 tablespoons vegetable oil
- 1 onion, chopped fine
- 1 tablespoon minced canned chipotle chile in adobo sauce
- 2 garlic cloves, minced
- 1 (10-ounce) can Ro-tel Diced Tomatoes & Green Chilies, drained
- 1 (12-ounce) can evaporated milk
- 2 tablespoons water
- Salt and pepper
