Cornbread Stuffing with Pecans

1. Preheat oven to 25. Butter a 13x9x2" pan and set aside
- 3/4 cups (1.5 sticks) unsalted butter plus more for baking dish
- 1 lb day old cornbread broken into 1 1/2" to 2" pices (about 9 cups)
- 2 1/2 cups chopped yellow onions
- 1/4 cups apple cider vinegar
- 3 cups chicken broth, divided
- 1 1/4 cups chopped toasted pecans (optional)
- 2 tsp kosher salt
- 1 tsp pepper

Black Bean Cakes

1. In colander, drain 1/2 cup of the salsa
- Note: Make up your own corn muffin mix with almond flour and corn meal if serving as gluten free. See delicious link for details.
- 1-1/2 cups prepared salsa
- 1 jalapeño pepper
- 2 15-oz. cans black beans, rinsed and drained
- 1 8.5-oz. pkg. corn muffin mix (Jiffy is best AND cheap!)
- 2-1/2 tsp. chili powder
- 2 Tbsp. olive oil
- 1/2 cup sour cream
- 1/2 tsp. chili powder
- Note: I usually omit the jalapeno because I don't like spicy food, either way I am sure you'll enjoy it.
Ultimate Oven Fries

1. Adjust oven rack to lowest position; heat oven to 475
- 3 russet potatoes, about 8 ounces each, peeled. Each potato cut lengthwise into 10 to 12 evenly sized wedges.
