Mom's "You Can Make this in Maine" Hoison Pork Stir Fry

Dice the pork. In a bowl, whisk together the hoisin sauce, soy sauce, sugar, rice wine/vinegar and garlic
- Pork loin sliced into slices and then diced. (1 to 2 lbs)
- 2 tbsp hoison sauce
- 1/4 cup soy sauce
- 1/4 cup sugar
- 1 tbsp rice wine or rice vinegar
- 2 large garlic cloves minced
- 1/4 cup honey
Enchilada Casserole

- For the enchilada sauce:
- 1 tablespoon olive oil
- 1/2 cup finely chopped Vidalia or other sweet onion
- Kosher salt and freshly ground black pepper
- 2 tablespoons tomato paste
- 1 clove garlic, grated on a rasp or finely minced
- 1 teaspoon ground cumin
- 1/2 teaspoon dried thyme
- 1 28-ounce can crushed tomatoes
- 3/4 cup beef broth
- For the beef layer:
- 2 tablespoons olive oil
- 1/2 cup finely chopped Vidalia or other sweet onion
- 1/2 cup finely chopped green bell pepper
- 1/2 cup finely chopped red bell pepper
- Kosher salt
- 3 cloves garlic, grated on a rasp or finely minced
- 1 pound 85 percent lean ground beef
- 1/2 to 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1/2 to 1 teaspoon dried thyme
- 1 packet (about 1/4 teaspoon) Sazon seasoning
- 2 Roma tomatoes, seeded and chopped
- 1/4 cup beef broth
- Freshly ground black pepper
- For the chicken layer:
- 1 rotisserie chicken, skin and bones discarded, meat shredded
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- For the casserole:
- 2 tablespoons unsalted butter, softened
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded pepper jack cheese
- 20 to 24 six-inch corn tortillas, cut in half

1. Make sauces. Combine oil, garlic, basil, oregano, lemon zest, salt, pepper, and red pepper flakes in large bowl

- 1/2 tsp dried oregano
- 2 tsp grated zest plus
- 1 TB juice from 1 lemon
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp red pepper flakes
- 3 TB mayonnaise
- 1 TB red wine vinegar
- 4 boneless, skinless chicken breasts (about 1 1/2 lbs)
- 6 ( 6 inch) sub rolls, slit partially open lengthwise
Shrimp Salad

- 1 tbsp white portion of a green onion finely diced

- 1/3 cup packed dark brown sugar
- 1 tablespoon prepared mustard
- 1/2 teaspoon kosher salt
- 1/2 teaspoon smoked paprika
- 1/8 teaspoon ground red pepper
- 3 (15-ounce) cans organic navy beans, drained - or 1 48 ounce jar
- 1 (8-ounce) can unsalted tomato sauce - or 3 tbsp tomato paste whisked into 1/2 cup chicken broth
