Apple Shortcake Crisp

Preheat oven to 400 degrees
- SHORTBREAD
- 2 cups flour
- 1 cup butter, chileld and sliced into pieces (2 sticks)
- 1/2 tea. baking powder
- 1/4 tea. salt
- 1/4 tea. nutmeg
- APPLE FILLING
- 6 cups sliced apples (about 7 medium)
- 1/2 cup sugar
- 2-3 tea. cinnamon
- 1/2 tea. nutmeg
- CRUMB TOPPING
- 1 cup oats (old-fashioned or quick cook)
- 1 cup whole wheat flour
- 1/2 cup softened butter (1 stick)
- 1 cup sugar
- 2 tea. cinnamon
Dip - Spinach & Artichoke Dip in a Bread Bowl

In a medium bowl, combine sour cream and ranch dressing mix
- 1 (16 oz) carton sour cream
- 1 (1 oz) pkg. dry ranch dressing mix
- 1 (14 oz) can artichoke heats, drained, rinsed and chopped
- 1 (10 oz) pkg. frozen chopped spinach, thawed and well drained
- 1 (2 oz) jar diced pimentos, drained and rinsed
- 1 (1 1/2 lb) round loaf bread, any kind
Cranberry Nut Bread

Preheat the oven to 350 degrees
- 2 cups sifted flour
- 1 cup sugar
- 1 3/4 tea. baking powder
- 1 tea. salt
- 1/2 tea. baking soda
- 1 egg
- 1/2 cup freshly squeezed orange juice
- 1/4 cup water
- 3 Tbsp. butter, melted
- 2 cups fresh or frozen cranberries
- 1 cup pecans, toasted and chopped
- 1 tea. grated orange zest
Salmon - grilled w/ Santa Cruz Chili Tequila Rub

Alternate: Maple Glaze
- 1/2 tea. salt
- 1 1/2 tea. pepper
- 1 1/2 tea. sugar
- 1 Tbsp. Santa Cruz Chili Powder
- 2 cloves garlic, minced
- 4 salmon steaks (about 8 zo. each)
- 2 Tbsp. butter, melted
- 2 Tbsp. freshly squeezed lemon or lime juice
- 1 tea. minced lemon or lime zest
- 2 Tbsp. tequila
- Alternate: Maple Glaze
- RUB: 2 Tbsp. paprika
- 1 Tbsp. Santa Cruz chili Powder
- 1/2 tea. cumin
- 1/2 tea. brown sugar
- 1 tea. salt
- Drizzle with 1 Tbsp. maple syrup 1 minute before you take the salmon off the grill.
Breakfast Casserole

- 1/2 cup butter, melted
- 3 medium baking potatoes, grated
- 2 lb. bulk pork sausage
- 2 cups (8 oz) grated Cheddar cheese
- 1 cup (4 oz) grated mozzarella cheese
- 8 eggs
- 1 cup milk
Peanut Noodles

Cook spaghetti in a large pot of boiling water until al dente
- 8 oz. spaghetti
- 2 Tbsp. sesame oil
- 1 bunch green onions, sliced (white parts only)
- 1 tea. minced fresh ginger
- 1/3 cup creamy peanut butter
- 1/4 cup soy sauce
- 1/4 cup hot water
- 1 Tbsp. cider vinegar
- 1 tea. sugar
- 1/4 tea. red pepper flakes
Sweet Potatoes - And Onions Roasted with Rosemary, Parmesan

Set 1 rack in center and 1 rack at lowest position in oven and preheat to 375 degrees
- 2 3/4 pounds tan-skinned sweet potatoes peeled, and cut into 1" cubes
- 8 tablespoons canola oil
- 3 garlic cloves minced
- 2 1/2 teaspoons salt
- 1 1/2 teaspoons coarsely-ground black pepper
- 1 1/2 pounds red onions - (abt 3 med) halved lengthwise, and cut crosswise into 1/4"-thick slices
- 1/2 cup freshly-grated Parmesan cheese
- 1 tablespoon chopped fresh rosemary

- 1/3 cup apple cider vinegar
- 2 Tbsp. molasses
- 2 Tbsp. worcestershire sauce
- 1 tea. hot sauce
- or -
- 1 cup yellow mustard
- 2 tea. worcestershire sauce
- 1 / 4cup red wine vinegar
- 1/4 cup white vinegar
- 1 tea. brown sugar
- fresh ground pepper to taste

- 1/4 cup chopped walnuts
- 1/4 cup butter, melted
