Corn - Creamed

In a medium skillet, cook bacon over medium heat until crisp
- 2 slices bacon
- 1 (16 oz) pkg. frozen corn, thawed and patted dry)
- 2 tea. cornstarch
- 1 tea. sugar
- 3/4 cup heavy whipping cream
- 1/4 tea. salt
- 1/4 tea. pepper
- 2 Tbsp. chopped green onion
Salmon - Planked w/ Hoisin-Mustard Glaze

Prepare a 2 zone fire for medium heat
- GLAZE
- 1 Tbsp. Hoisin sauce
- 1 Tbsp. Dijon mustard
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. butter, melted
- 1/2 tea. dark sesame oil
- 1 large salmon fillet (with skin), 2 - 2 1/2 lb., about 16" long and 3/4" thick
- 1/2 tea. salt
- 1/4 tea. pepper
- 1 untreated cedar plank, about 16"x8", soaked in water for at least 1 hour
Pork Tenderloin - Cuban Style

Mix orange juice, grapefruit juice, cilantro, cumin, oregano, garlic, salt and pepper flakes in large zip-lock bag
- 1 1/2 lb. pork tenderloin, trimmed of fat & silver skin
- 1/4 cup orange juice
- 1/4 cup grapefruit juice
- 2 Tbsp. chopped fresh cilantro
- 1 tea. ground cumin
- 1 tea. dried oregano
- 2 garlic cloves, finely chopped
- 1/2 tea. salt
- 1/2 tea. red pepper flakes
Cranberries - Christmas Cranberries (with bourbon)

In a large saucepan, combine the cranberries, sugar, orange juice and bourbon
- 2 pkg. (12 oz each) cranberries
- 1 1/2 cups sugar
- 1 cup orange juice
- 1/4 cup bourbon
- 3 tea. vanilla
- 1 tea. grated orange peel
Broccoli-Cheese Appetizers

Heat oven to 375 degrees. Spray 9" square pan with cooking spray
- 1 box (10 oz) frozen chopped broccoli, thawed, drained
- 1 can (7 oz) vacuum-packed whole kernel corn, drained
- 1 small onion, chopped (about 1/4 cup)
- 1/2 cup Bisquick mix
- 1/4 tea. garlic salt
- 1/2 cup milk
- 1/4 cup butter, melted
- 2 eggs
- 1 cup shredded Cheddar cheese
Mini Mock Reubens

- Pumpernickel cocktail bread
- mustard
- sauerkraut, drained and patted dry
- pickle relish
- shredded swiss
Oatmeal - Overnight Maple

- 2 cups old fashioned oats
- 1 cup fat free milk
- 1/4 cup maple syrup
- 2 tea. vanilla extract
- 1 cup vanilla yogurt
- 1/2 cup chopped walnuts, toasted
- assorted fresh fruit
BBQ Brisket Sliders

Heat an extra large skillet over medium-high heat for 3 minutes
- 1 flat-cut beef brisket (4 lb.) trimmed
- 1 1/2 tea. ancho chile powder
- salt and pepper
- 1 1/2 Tbsp. olive oil
- 1 can (12 oz) cola
- 1 can (14 oz) fire-roasted crushed tomatoes
- 16 small slider buns or 8 hamburger buns
- 1/2 cup chipotle mayonnaise
- 4 small dill pickles, cut on an angle into thin slices
- 16 thin slices swiss cheese
Green Mint Bark

Line a baking sheet with foil; set aside
- 1 pkg. (10-12 oz) white baking chips
- 12 oz. green candy coating disks
- 1 tea. peppermint extract
- 2-3 candy canes, crushed
