New Potatoes - Grilled in a packet

Heat grill to medium heat
- 1/2 lb. each red and white baby new potatoes (about 4 each)
- 2 Tbsp. water
- 2 tea. oil
- 3 Tbsp. Kraft Sun-Dried Tomato dressing
- 2 Tbsp. grated parmesan cheese
- 1 Tbsp. chopped fresh parsley
Green Tomato Cobbler

Preheat oven to 375 degrees
- 1/2 cup butter
- 1 cup flour
- 2 cups sugar, divided
- 1 Tbsp. baking powder
- pinch of salt
- 1 cup milk
- 4 cups chopped green tomatoes
- 1 Tbsp. lemon juice
- 1 tea. cinnamon
- ice cream
Salmon - BBQ'd (actually baked in the oven)

Combine ingredients. Spread on top of salmon fillets
- 3 Tbsp. brown sugar
- 2 tea. ancho chile powder
- 1 garlic clove, crushed
- 1 tea. finely greated orange rind.
- 4 (5 oz) salmon fillets
Cranberry and Jalapeno Pepper Jelly

In a medium saucepan, combine cranberry juice, vinegar, and jalapeno peppers
- 1 1/2 cups cranberry juice (not low-calorie)
- 1 cup vinegar
- 2-4 fresh jalapenos, halved and seeded
- 5 cups sugar
- 1/2 of a 6 oz. package (1 foil pouch) liquid fruit pectin
- 5 small fresh red serrano or Thai chile pepper(for decoration)
Sweet Potato & Poblano Salad w/ honey & rosemary

Dressing: whisk ingredients, gradually whisk in olive oil
- DRESSING:
- 2 Tbsp. honey
- 1 1/2 Tbsp. white wine vinegar
- 1 Tbsp. chopped fresh rosemary
- 1 Tbsp. minced shallot (about 1 small)
- 2 tea. Dijon mustard
- Dash of Worcestershire sauce
- 1/4 cup olive oil
- POTATOES:
- 21/2 # sweet potatoes, peeled and quartered lengthwise into wedges
- oil for brushing
- 2 fresh poblano chilies (about 8 oz. total), seeded, diced
- 2 green onions, thinly sliced diagonally
- 1/4 cup chopoped fresh parsley
Rio Grande Pot Roast

Mix salsa, beer, tomato paste and taco seasoning in a 5 qt
- 11/2 cups thick-and-chunky salsa
- 1 cup beer
- 1 can (6 oz) tomato paste
- 1 pck. (1/25 oz) taco seasoning
- 1 3 lb. boneless beef bottom round roast
- 1/2 tea. salt
- 1/2 tea. pepper
- 2 Tbsp. peanut butter
- 1/3 cup chopped cilantro
Rhubarb - Old Fashioned Pudding Cake

In a large saucepan, combine the rhubarb and 1 cup sugar
- 4 cups diced fresh or frozen rhubarb
- 1 1/2 cups sugar, divided
- 1/4 cup shortening
- 1 egg
- 1/2 tea. vanilla
- 1 cup flour
- 2 tea. baking powder
- 1/4 tea. salt
- 1/2 cup milk
Sweet Potatoes - baked with raisins and pecans

Preheat oven to 400 degrees
- 5 sweet potatoes, peeled and cubed
- 1 oz. raisins
- 1 ounce chopped pecans
- 1/4 cup butter, melted
- 1/2 cup maple syrup
- 1/2 cup water
Southwest Turkey Soup

In a large saucepan, saute onion in oil until tender
- 1 medium onion, chopped
- 1 Tbsp. olive oil
- 1 can (14 1/2 oz) chicken broth
- 2-3 Tbsp. diced jalapeno pepper
- 3 Tea. cumin
- 1 1/2 tea. chili powder
- 1/4 tea. salt
- 1/4 tea. cayenne pepper
- 3 cups cubed cooked turkey
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (10 oz) diced tomatoes and green chilies, undrained
- 1 1/2 cup frozen corn
- Sour cream, shredded cheddar cheese and sliced black olives, optional
Sweet Potatoes - Scalloped - individual servings

Heat over to 400 degrees. Toss together the potato slices, garlic, thyme, 3/4 tea
- 2 medium sweet potatoes, sliced
- 2 medium white potatoes, sliced
- 2 cloves garlic, crushed
- 2 tea. fresh thyme leaves
- salt & pepper
- 2 1/2 c. heavy cream
- butter for the foil
