Saute onions in a skillet with the olive oil
- 1 onion, finely chopped
- 1 Tbsp. olive oil
- 3 cloves garlic, crushed
- 1 jalapeno, seeded and chopped
- 1 (16 oz) can diced tomatoes, undrained
- 2 Tbsp. tomato paste
- 2 green chiles, roasted and chopped
- 2 tea. cumin
- 1/4 tea. cayenne
- 1 Tbsp. cornmeal
- 2 1/2 cups chicken stock
- 2 cups red chile sauce
- 2 boneless chicken breasts
Stuffed Banana Peppers

Grease 13-x" baking dish. Spread 1/4 cup tomato sauce in the dish and set aside
- 3 cups tomato sauce, divided
- 12 banana peppers
- 2 eggs, slightly beaten
- 1/2 cup seasoned bread crumbs
- 2/3 cup grated parmeasan cheese, divided
- 1/8 cup minced fresh basil, or 2 tea. dried basil
- 3 garlic cloves, minced
- 1/4 tea. salt
- 1/4 tea. pepper
- 1/4 lb. ground beef
- 1/4 lb. hot bulk Italian sausage
- 1/4 lb. ground veal
- 1/8 cup olive oil

Pork Loin - Chili-lime Pork Loin

Prepare a grill for indirect grilling over medium-high heat
- 4 Tbs. chili-lime rub
- 6 Tbs. vegetable oil
- 4 lb. boneless pork loin roast, butterflied
- Kosher salt and freshly ground pepper, to taste
- 4 ears of corn, husks and silks removed, corn cut into 1-inch rounds
- 6 Anaheim chilies
- 2 Tbs. unsalted butter, cut into 1/2-inch pieces
- 2 tsp. fresh lime juice
- 1 Tbs. finely chopped fresh cilantro
Easy Fish Chowder

Combine onion, garlic, celery, potatoes, Old Bay and salt in a slow cooker
- 1 1/4 cups diced yellow onion
- 1 clove garlic, minced
- 4 ribs celery, diced
- 12 oz. baby red potatoes, cut into pieces
- 1 tea. Old Bay seasoning
- 1/2 tea. salt
- 3 Tbsp. cornstarch
- 2 cups chicken broth
- 1 lb. halibut fillets, cut into 1" pieces
- 1 tea. lemon zest
- 1 cup half-n-half
