Easy Chicken Parmesan with Croutons

Preheat oven to 350 degrees F (175 degrees C)
- 2 tablespoons olive oil
- 2 cloves garlic, crushed and finely chopped
- 1/4 teaspoon crushed red pepper flakes, or to taste
- 6 skinless, boneless chicken breast halves
- 2 cups prepared marinara sauce
- 1/4 cup chopped fresh basil
- 1 (8 ounce) package shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese, divided
- 1 (5 ounce) package garlic croutons
Beckee's Special

Put in crock pot for 8 hours
- Brisket
- Can of beef broth
- Lipton onion soup mix
- 1/2 to 1 cup of Ranch dressing
- 3 T of flour
- Cavendar's Greek seasoning
- Add potatoes if desired.
Potato Sausage Soup - Toscana

This potato soup with sausage is similar to the Olive Garden's famous Toscana soup
- 3 links sweet Italian sausage
- 2 medium baking potatoes cut in half lengthwise
- 2 to 3 slices bacon diced
- 3/4 cup onions diced
- 1 medium to large clove garlic, minced
- 2 cups chopped kale
- 2 T chicken base
- 4 cups of water
- 1/2 cup whipping cream
Beef Stroganoff

• Season the beef with the salt and creole spice
- Creole Seasoning Recipe:
- 1 lb lean ground beef
- 1/2 teaspoon salt
- 1 teaspoon creole seasoning, recipe follows
- 1 tablespoon oil
- 1/4 cup chopped yellow onions
- 8 oz sliced white mushrooms
- 3 cloves garlic, crashed
- 1/4 lb small elbow macaroni or wide egg noodles, cooked
- 1/2 cup beef broth
- 2 cups sour cream
- grated white cheddar, optional
- 2 tablespoons paprika
- 1 tablespoon salt
- 1 tablespoon garlic powder
- 1/2 tablespoon black pepper
- 1/2 tablespoon onion powder
- 1 teaspoon Cajun pepper
- 1/2 tablespoon dried oregano
Unstuffed Peppers

Brown meat add onions and peppers until cooked
- 2 peppers
- 1 onion
- 11/2 ground beef
- 2 cans fire roasted tomatoes basil and garlic
- 1 can tomato sauce
- Salt and pepper
- Parmesan cheese
- Instant rice

- 1 cup softened butter or margarine
- 1 1/2 cups powdered sugar
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon almond flavoring
- 2 1/2 cups flour
- 1 teaspoon soda
- 1 teaspoon cream of tartar
Crab Meltaways

Great make ahead appetizer to have in your freezer for emergencies!! Split English Muffins and set aside
- 1 7 oz can crab meat
- 1 jar Old English Sharp Cheddar
- 2 Tbsp mayonnaise
- 1 stick butter, melted
- 2 tsp garlic salt
- 2 tsp seasoned salt
- English Muffins
Peggy's Chicken Enchilada

Cover and bake till bubbly Oven : 350 degrees
- Mix together:
- 4- 6 Chicken Breasts chopped
- 1 pkg of large flour tortillas
- ½ onion minced
- 1 small can of sliced black olives
- 1 small can of green chilies
- 1 can cream mushroom soup
- 2 can cream chicken soup
- 1 – 8 oz sour cream
- Mix well
- ** (Set aside a portion of this mixture to use on top.)
- Add:
- Chopped chicken
- 1 pkg Monterey Jack/Colby Jack cheese
- Mix well
- Roll tortillas with mixture and place in Pam sprayed baking dish.
- **(I usually put a little of the mixture set aside earlier in the bottom of the baking dish also)
- ** (Top tortillas with the remaining mixture you set aside earlier.)
- 1 pkg cheddar cheese over top of casserole
Spicy Pretzels

Turn oven on 200 degrees. Mix all the ingredients together
- 1/2 cup of oil
- 1 T dill weed
- 1 pkg of fiesta ranch dressing
- 1 t red pepper
- 1 t tabasco
- 1 package of pretzels
Broccoli & Cheese Soup

Saute' onion in butter. Set aside
- 2 tablespoon melted butter
- 1 medium chopped onion
- 1/2 cup melted butter
- 1/2 cup flour
- 4 cups half-and-half cream
- 4 cups chicken broth
- 1 lb fresh broccoli, pureed
- 2 cups carrots, julienned
- 1/2 teaspoon nutmeg
- 16 ounces grated sharp cheddar cheese
- salt and pepper
