Ingredients

  • 2 tablespoon melted butter
  • 1 medium chopped onion
  • 1/2 cup melted butter
  • 1/2 cup flour
  • 4 cups half-and-half cream
  • 4 cups chicken broth
  • 1 lb fresh broccoli, pureed
  • 2 cups carrots, julienned
  • 1/2 teaspoon nutmeg
  • 16 ounces grated sharp cheddar cheese
  • salt and pepper

Preparation

Step 1

Saute' onion in butter. Set aside.
Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add half & half.
Add the chicken broth. Simmer for 20 minutes.
Add the broccoli, carrots, and onions. Simmer over low heat 20-25 minutes.
Add salt and pepper. Return to heat and add cheese. Stir in nutmeg.
