Cheesy Potatoes

Preheat over to 350 degrees
- 1 pkg of unthawed frozen hashbrowns
- 1 stick of butter
- 1 cup of shredded cheddar cheese
- 6 oz sour cream
- 1 can cream of mushroom
- cornflakes
Creamy Chicken Enchiladas

In skillet or saucepan coated with nonstick cooking spray, sauté onion until tender

- 1 cup sour cream

- 1 cup mozzarella cheese, divided

- 2 cups cubed cooked chicken breast
Mini Florentine Cups

Preheat oven to 350. Place one turkey (ham) slice in each of 24 mini muffin pan cups
- 1 pkg (10oz) frozen chopped spinach, cooked, well drained
- 1/2 c mozzarella shredded cheese
- 1/3 c cream cheese spread
- 1 T grated Parmesan cheese
- 1 T finely, chopped onion
- 1/4 t garlic powder
- 24 slices deli style shaved turkey breast or ham
Sweet & Sour Meat Balls

Form mixture of 1 1/2 lbs lean ground pork (loin), 1 c dry bread crumbs, 1/2 c
- Sauce:
- 1 1/2 lbs lean ground pork (loin)
- 1 c dry bread crumbs
- 1/2 c. finely ground almonds
- 2 eggs
- 3 T soy sauce
- 2 chopped cloves of garlic
- Cornstarch
- 3/4 c sugar
- 2 T cornstarch
- 1 c mild vinegar
- 1/4 c soy sauce
- 9 oz pineapple juice
- Stir until thick and smooth. Add pineapple juice to taste. Pour over meat balls. Makes 90
- Form mixture into balls size of quarters. Roll in cornstarch and slowly fry 20 minutes in skillet. Do not deep fry.

- 1 can shoe peg corn (drained)
- 1 can french cut green beans (drained)
- 1 can early peas (drained)
- 1 red onion chopped
- 1 cup chopped green pepper
- 1 small jar pimentos (drained)
- 1 cup sugar
- 1/2 cup salad oil
- 3/4 cup white vinegar
Salad Pizza

- Chop and sprinkle on top:
- 1 can crescent rolls (8 ct.)
- Roll out into 1 rectangle. Place on cookie sheet and bake at 375 for 8-10 minutes. Cool
- 1 8 oz pkg cream cheese
- 1/2 cup mayonnaise
- 1 pkg. original Ranch dressing
- Mix and spread over cooled crust.
- 2 carrot sticks
- 1 small onion
- 1/4 head broccoli
- 1/4 head cauliflower
- 1 (4oz) pkg. shredded cheddar cheese
- Refrigerate. Cut into small squares.

- 1/2 cup of sour cream
- 1/4 cup of water
- 2 tablespoons chopped parsly
- 4 cups thinly sliced potatoes

Mini Turkey Sliders

Combine turkey, cheese, bread crumbs and grated onion; mix just until combined

- 1 lb lean ground turkey
- 1/2 cup shredded cheddar cheese
- 1/4 cup plain bread crumbs
- 1/2 small yellow onion, grated
- salt and pepper to taste
- 1 tsp olive oil
- 8 bakery wheat cocktail buns
- lettuce
- sliced tomato
- ketchup
- mustard
