Mediterranean Shrimp

Prepare linguini (keep warm) 12 in skillet 2 TBS olive oil cook shrimp till done
- 12 oz linguini
- 3 T olive oil
- 1 1/2 lb shrimp
- 1 onion chopped
- 2 cloves garlic
- 2 28oz can tomato (drained)
- 3.4 cup sliced olives
- 2 tsp dried oregano
- 2 tsp Italian seasoning
- 1/2 tsp salt
- pepper
- 1/2 cup Feta cheese
- 2 T chopped parsley
Almond Cheesecake

In a large mixing bowl, combine flour and brown sugar
- 1 c All-purpose flour
- 1/3 c Brown sugar -- packed
- 6 tb Butter -- softened
- 1 pk Cream cheese -- 8 oz at room temp.
- 1/4 c Granulated sugar
- 1 Egg
- 4 tb Amaretto or 1 T. Almond Extract plus 3 T. water
- 1/2 ts Vanilla
- 4 tb Almonds -- chopped
Sangria

Mix together. Freeze! Stir every 8-10 hours
- 2 bottles Riverboat Red
- 6 cups Sprite
- 6 cups Fresca
- 2 cups Grenadean
- 2 cups orange juice
- 1/2 bottle Peach Schnapps
Mexican Casserole

Preheat oven to 350 degrees F (175 degrees C)
- 1 pound lean ground beef
- 2 cups salsa
- 1 (16 ounce) can chili beans, drained
- 3 cups tortilla chips, crushed
- 2 cups sour cream
- 1 (2 ounce) can sliced black olives, drained
- 1/2 cup chopped green onion
- 1/2 cup chopped fresh tomato
- 2 cups shredded Cheddar cheese
BBQ Meatballs

- Sauce:
- 1 can evaporated milk
- 3 lbs. Ground beef
- 2 cups quick oatmeal
- 2 eggs
- 1 cup chopped onion
- 1/2 tsp. Garlic powder
- 1/2 tsp. Pepper
- 1/2 tsp. Salt
- 2 tsp. Chili powder
- 2 cups catsup
- 1 cup brown sugar
- 2 Tbsp. Liquid smoke
- 1/2 tsp. Garlic powder
- 1/2 cup chopped onion
Santa Fe Chicken & Rice

Prepare the rice separately
- 2-3 boneless chicken breast, sliced
- Salsa (add to taste)
- 11 oz. can Mexi-corn (Green Giant brand)
- 11 oz. can black beans (rinsed and drain)
- White rice (either minute rice or regular-your choice)
BBQ Green Beans

Put the cut up onion and bacon bits in a skillet until onions are cooked
- 4 cans of green beans (drained)
- 1 bag of real bacon bits
- 1 onion
- 1 cup of brown sugar
- 1 cup of ketchup
Creamy Baked Chicken

Arrange chicken in 9x13 pan, top with cheese
- 4 whole chicken breasts, split
- 8 slices swiss cheese
- 1 can cream of chicken soup
- 1/4 cup white wine or blush wine
- 1 cup herb seasoned stuffing (Pepperidge Farm mix)
- 1/4 cup butter, melted
White Chicken Chili

Mix together and heat
- 3-4 cans of Northern Beans
- 1 can of Chili Beans
- 1 can of Red Kidney Beans
- 1 box of Cream Cheese
- 1 tub of Sour Cream
- Butter ½ to 1 stick- up to you
- 1 Packet of McCormick or Williams Chicken Chili Mix
- 4 – 5 Boneless Chicken Breasts OR 2 BIG cans of Chicken Breast
Zucchini Fries & Blooming Onion Dip

Cut each Zuchinni into 3" sticks about the diameter of your finger
- Sauce:
- 3 Medium Size Zuchinni
- 1 TBL of butter
- 1 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 TBL of Italian seasoning
- 2 large eggs
- Medium sweet onion
- 2 T cider vinegar
- 2 T honey
- 2 T Dijon mustard
- 1 cup mayonnaise
