Apple Lasagna

Preheat oven to 350 degrees
- 2 cups shredded cheddar cheese
- 1 cup ricotta cheese
- 1 egg
- 1/4 cup white sugar
- 1 teaspoon almond extract
- 2 (21 ounce) cans apple pie filling
- 8 lasagna noodles, cooked and drained
- 6 tablespoons all purpose flour
- 6 tablespoons packed brown sugar
- 1/4 cup quick cooking oats
- 1/2 teaspoon ground cinnamon
- 1 pinch ground nutmeg
- 3 tablespoons butter
- 1 cup sour cream
- 1/3 cup packed brown sugar
Texas Caviar

Mix all together and chill for several hours or overnight
- 1 can black beans drained
- 1 can black-eyed peas drained
- 1 can white shoepeg corn drained
- 1 can sliced olives drained
- 1 can rotel tomatoes
- 1 chopped onion
- 1 chopped green pepper
- 1 8oz bottle Italian dressing
- Garlic salt or powder to taste
Chicken Bacon Ranch Pasta

Cook pasta according to its package's directions
- 10-12 oz penne pasta
- 2 cups cooked and chopped chicken
- 3/4 cup cooked and crumbled bacon
- 1/4 cup butter
- 1/4 cup flour
- 2 cups heavy cream (milk would be fine, too)
- 1 tsp. onion powder
- 1 tsp. garlic salt
- 1/3 cup ranch dressing, I used Lite House
- 3/4 cup shredded cheddar cheese
Caramel Apple Crunch

Place apples in a greased 13” x 9” x 2” baking dish
- 8 Cups Sliced Peeled Tart Apples
- 33 Caramels, divided
- 2 Tblsp. Plus 2 Tsp. Milk, divided
- 3/4 Cup All Purpose Flour
- 3/4 Cup Quick Cooking Oats
- 3/4 Cup Packed Brown Sugar
- 1/2 Cup Chopped Walnuts
- 1/8 Tsp. Salt
- Dash Ground Cinnamon
- 1/2 Cup Cold Butter
- Vanilla Ice Cream, optional
Fluffy Lemon Pie

Combine pudding miz and soft drink mix
- 1 package (3.4 oz) sugar-free instant vanilla pudding mix
- 1 teaspoon sugar-free lemonade soft drink mix
- 1 cup cold fat-free milk
- 1 carton (8 oz) frozen reduced-fat whipped topping, thawed, divided
- 1 reduced-fat graham cracker crust (8 inches)
Taco Roll Ups

Mix first 6 ingredients together
- 1 8oz bar of cream cheese
- 12 oz sour cream
- 2 cups shredded cheese
- 1 pkg fiesta ranch dressing
- 1 1/2 - 2 lbs hamburger, browned and drained
- Taco seasoning, mild
- 10 tortilla shells
Rice & Broccoli

Preheat oven at 350 degrees
- 1 10oz pkg chopped broccoli
- 1 can cream of mushroom
- 1 can cream of chicken
- 2 cups of minute rice
- 1 small jar of cheeze whiz
- 1 stick of butter
Butterscotch Toffee Squares

Preheat oven to 350F. Coat an 8-inch square pan with cooking spray
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/3 cup butter. Melted and cooled slightly
- 1 cup packed light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup milk chocolate toffee bits (such as Heath)
Tortilla Wraps

Mix all ingredients. Spread on tortillas
- 1 small can of chopped green chiles
- 2 8oz pkg cream cheese
- 1 pkg hidden valley ranch
- 2 green onions
- 1 small jar of pimentos
- 1 small can chopped black olives
- 4 large soft tortillas
Cheeseburger Paradise Soup

In a soup kettle, combine the first nine ingredients; bring to a boil
- 6 medium potatoes, peeled and cubed
- 1 small carrot, grated
- 1 small onion, chopped
- 1/2 cup chopped green pepper
- 2 TBSP chopped seeded jalapeno peppers
- 3 cups of water
- 2 TBSP plus 2 tsp beef bouillon granules
- 2 garlic gloves
- 1/8 tsp pepper
- 3 pounds ground beef
- 1/2 pound sliced mushrooms
- 2 tsp butter
- 5 cups milk, divided
- 6 TBSP all purpose flour
- 1 package (16 ounces) processed cheese (Velveeta), cubed
- Crumbled cooked bacon
