Spinach Artichoke Dip

Bowl 1: Mix spinach and artichoke, both chopped small
- 1 box frozen spinach, drained
- 1 can artichoke
- 1 bag parmesean cheese
- 1 bag monterey-jack cheese
- 8 oz cream cheese, room temp.
- 8 oz sour cream
- 1 cup mayo
- 2 tsp garlic
Tex-Mex Chilaquiles with Eggs

1. Whisk eggs, sour cream, 1/2 tsp salt and 1/4 tsp pepper in a large bowl
- 8 large eggs
- 1/2 cup sour cream, plus extra for serving
- salt and pepper
- 3 TB unsalted butter
- 1 onion, chopped fine
- 1 red bell pepper, seeded and chopped fine
- 2 (10oz) cans green enchilada sauce
- 3/4 cup chopped fresh cilantro
- 10 cups low-sodium tortilla chips (I couldnt find low-sod. chips. I used regular and I didnt think it tasted too salty, but I enjoy my salt!)
- 1/2 cup shredded pepper Jack cheese
Spicey Cheese Dip

1. Combine and microwave all ingredients in 1
- 1 jar cheez whiz
- 2 TB chili powder
- 1 cup plain spaghetti sauce
- 1 tsp ground cumin
- 1/2 tsp ground red pepper
- 2 tsp brown sugar
- 1/2 tsp lime juice
Mums Pumpkin Pie

1. Preheat oven to 375. 2
- 9 " regular frozen pie crust
- 1 can pumpkin puree
- 1/2 cup sugar
- 1/4 tsp nutmeg
- 1/2 tsp
- 1/2 tsp ginger
- 1/8 tsp cloves
- 1 TB molasses
- 3 eggs
- 3/4 cup light cream
Teriyaki Chicken and Noodle Bowl

1. With sharp kitchen scissors, cut up chicken into strips
- 4 chicken thighs, boneless and skinless
- 2 TB olive oil
- salt and pepper
- 3 large carrots
- 1 red pepper
- broccoli
- 1/2 red onion
- 16 oz pkg. angel hair pasta or thin spaghetti noodles
- Teriyaki Sauce
- 1 1/2 cups cold water
- 3/4 cup packed brown sugar
- 1/2 cup soy sauce
- 1 tsp garlic powder
- 3 TB corn starch
- 1 tsp sesame oil
Light & Fresh Potato Salad

1. Dressing- combine all ingredients; stir with whisk
- Dressing: 1/4 cup rice vinegar
- 2 TB canola oil
- 1/4 tsp salt
- 1/8 tsp pepper
- Salad: 5 cups cubed red potato (about 2 lbs)
- 1/2 tsp salt
- 1 cup chopped/peeled cucumber
- 3/4 cup sliced cherry tomatoes
- 3/4 cup chopped green bell pepper
- 1/2 cup chopped orange bell pepper
- 1 can sliced olives, drained
Pumpkin Whoopie Pies

1. Preheat oven to 350. Line baking sheets with parchment
- 6 oz unsalted butter ( 1 stick melted, 1 stick softened)
- 1 cup brown sugar
- 2 large eggs
- 1 cup canned pumpkin puree
- 1 TB pumpkin pie spice
- 1 1/2 tsp vanilla
- 1 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp salt
- 1 2/3 cup flour
- 4 oz. cream cheese
- 1 cup confectioners sugar
Beef and Broccoli Stir-Fry

1. Whisk first 6 ingredients in bowl
- 1/2 cup water
- 1/4 cup hoisin sauce
- 1/4 cup dry sherry
- 2 TB soy sauce
- 2 tsp toasted sesame oil
- 2 tsp cornstarch
- 3 TB vegetable oil
- flank steak, about 1 pound, halved lengthwise and sliced thin
- 1 (16oz) bag broccoli florets
- 1 red bell pepper, seeded and sliced thin
- 6 garlic cloves, minced
- 1 TB grated fresh ginger
Beef Macaroni Skillet

1. In a large skillet cook beef, onion and green pepper over medium heat; drain
- 1/2 lb lean ground beef
- 1/3 cup chopped onion
- 1/4 cup chopped green pepper
- 1 & 1/2 cups spicey hot V8 juice
- 1/2 cup uncooked elbow macaroni
- 1 tsp worcestershire sauce
- 1/4 tsp pepper
