Sweet and Sour Baked Chicken

1. Preheat oven to 350. Sprinkle chicken lightly with salt and pepper
- 8 skinless, boneless chicken breast halves, about 2.5 lbs
- salt and black pepper
- 2 TB vegetable oil
- 1 20oz can pineapple chunks, undrained
- 1 cup jellied cranberry sauce
- 1/4 cup cornstarch
- 1/4 cup packed brown sugar
- 1/4 cup rice vinegar or cider vinegar
- 1/4 cup frozen orange juice concentrate, thawed
- 1/4 cup dry sherry, chicken broth, or water
- 1/4 cup soy sauce
- 1/2 tsp ground ginger
- 2 medium green sweet peppers, cut into bite-size strips
Summer Barley Salad

1. Cook barley according to pkg directions, omitting salt
- 1 1/2 cups uncooked pearl barley
- 1 cup fresh corn kernels
- 1 cup diced seeded plum tomatoes, (about 2 small)
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh parsely
- 20 olives, coarsely chopped
- 3 TB frsh lemon juice
- 2 TB olive oil
- 1/4 tsp pepper
- 1 garlic clove, minced
- 3/4 cup crumbled feta cheese
My Pumpkin Bread

1. Preheat oven to 350. Grease one large or two small loaf pans
- 1/3 cup shortening
- 1 1/3 cup sugar
- 2 eggs
- 1 cup canned pumpkin
