Frosty Fruit Punch

1. Boil sugar and water. Cool
- 1 QT sugar
- 1 &1/2 QT water
- 1 &1/4 cups orange juice
- 1/4 cup lemon juice
- 1 (46oz) can pineapple juice
- 5 medium bananas
- 2 (28oz) bottles white soda
Asian Orange Chicken

1. Sprinkle chicken with pepper
- 1/2 lb chicken tenderloins
- 1/8 tsp pepper
- 1/4 cup chopped onion
- 2 TB orange juice
- 2 TB reduced-sodium soy sauce
- 1 TB olive oil
- 1 garlic clove, minced
- 1 TB hoisin sauce
- 1 1/2 tsp minced fresh ginger
- 1 tsp orange peel
Jerk Chicken Nachos

1. Preheat oven to 425°. Arrange tortilla chips in a slightly overlapping layer on a large round stone
- 6 cups tortilla chips
- 3 cups diced cooked chicken
- 2 cups shredded cheddar and monterey jack cheese
- 2 TB Jamaican jerk rub, divided
- 1 small red bell pepper
- 1 lime
- 2 TB snipped fresh cilantro
- 1/4 cup sour cream and 1 tsp additional jamacian jerk rub
Stuffed Roasted Red Peppers

1. Cut tops off peppers and de-seed
- 5 large red bell peppers
- 1 TB olive oil
- 4 garlic cloves, minced
- 6 oz fresh spinach
- 1 TB fresh lemon juice
- 1 tsp salt
- 1 cup uncooked couscous
- 1/2 cup crumbled feta cheese
Spicey Peanut Chicken

1. Heat oil in a dutch oven
- 1 TB peanut oil
- 1 cup chopped onion
- 1 1/2 TB minced garlic
- 2 1/2 lb boneless chicken breast, cut into 1" pieces
- 1/3 cup peanut butter
- 1 1/2 tsp curry powder
- 1 tsp salt
- 1 tsp crushed red pepper
- 1/2 tsp black pepper
- 1 (6oz) can tomato paste
- 3 cups plum tomatoes (about 4 tomatoes)
- 2 (14.5oz) cans chicken broth
- cooked rice
Caramel Mudslides

1. Place 1'st four ingredients in a blender until smooth
- 2 cups vanilla low-fat ice cream
- 2 sliced bananas, frozen
- 1/2 cup 1% low-fat milk
- 1/3 cup frangelico or dark rum
- 6 TB caramel sundae syrup
Tumeric Ginger Chicken Saute

1. Heat large skillet over medium heat
- 1 TB olive oil
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped red bell pepper
- 1 TB finely chopped red onion
- 2 tsp fresh grated ginger
- 2 cloves garlic, minced
- 2 lbs chicken breasts, cut into 1" pieces
- 2 TB chopped parsley
- 2 tsp tumeric
- 1 tsp salt
- 1/3 tsp paprika
- 1/2 (10oz) pkg. chopped frozen spinach, thawed and strained/squeezed dry

- 2 green onions with tops
- 1 pkg. (13.8oz) refrigerated pizza crust
