Enchilada Casserole

1. In large skillet, cook beef, onion, chili powder, and cumin until meat is browned
- 1/2 lb. ground beef
- 1/2 cup chopped onion
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 15oz. can corn, drained
- black olives, sliced
- 8oz carton sour cream
- 2 TB flour
- 1/4 tsp garlic powder
- 8 six-inch corn tortillas
- 10oz can enchilada sauce or 10.5oz can tomato puree
- 2 cups shredded cheddar cheese
- chopped tomato, sliced green onions and diced green chili peppers- optional
Curried Chicken Salad

1. Combine all ingredients in order
- 1 roasted chicken, shredded
- 1 medium apple, finely chopped
- 2 TB golden raisins
- 2 TB dried cranberries
- 8 oz. fat-free plain greek yogurt
- 1/4 cup apricot preserves
- 2 TB curry powder
- 2 TB dijon mustard
- 1/2 tsp salt
- 1/2 tsp pepper

Swedish Meatballs

1. Preheat oven to 400. Line a roasting pan with foil
- 3 TB unsalted butter
- 1/2 onion, minced
- 1 cup fresh bread crumbs
- 1/2 cup cold whole milk
- 1 egg
- 1 tsp caraway seeds
- 3/4 tsp salt
- 3/4 tsp pepper
- 1/2 tsp allspice
- 1 lb ground beef
- 1/2 lb ground pork
- 2 TB flour
- 1 cup half-n-half
- 3/4 cup beef broth
- 1 tsp worcestershire sauce
Crunchy Lemonade Drumsticks

1. Mix 1 TB lemon zest and the lemon juice in a large bowl
- 2 TB grated lemon zest
- 1/2 cup fresh lemon juice
- 3 TB packed light brown sugar
- 1/3 cup buttermilk
- 12 skin-on chicken drumsticks
- kosher salt and pepper
- 2 cups panko
- 1 TB chopped fresh thyme
- pinch of cayenne pepper
- 1/4 cup mayo
- olive-oil cooking spray
A1 slow cooker pot roast

1. Mix sauce, soup mix and water together
- 2.5 lb beef chuck eye roast
- 1/2 cup A1 sauce
- 1/2 cup water
- 1 pkg. onion-mushroom soup mix

Gingersnap Dip

- 1 pkg (8oz) cream cheese, softened
- 1 cup powdered sugar
- 2 tsp pumpkin pie spice
- 1 carton (8oz) cool whip, thawed
Zesty Ravioli Skillet

1. Add oil to 12-in. skillet; heat over med-high heat 1-3 minutes or until shimmering
- 1/3 cup heavy whipping cream
- 4 cups loosely packed fresh baby spinach leaves
- 6 oz Provolone cheese, grated
- 1 TB olive oil
- 1 small jalapeno pepper, seeded
- 3 garlic cloves, pressed
- 2 cans (14.5oz) diced tomatoes with onions, undrained
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 pkg (24oz) small cheese ravioli
Chicken Enchilada Soup

1. In large dutch oven add chicken stock and heat over medium heat
- 3 cups chicken stock
- 2 skinless chicken breasts
- 2 tsp ground cumin
- 2 tsp chili powder
- 1/2 tsp cayenne pepper
- 28 oz. can diced tomatoes
- 2 jalapeno peppers, sliced
- 1 green bell pepper, diced
- 1 large onion, diced
- 3 heaping tsp. minced garlic
- 1 pkg frozen corn
- 1 8oz can tomato paste
- 8 oz. shredded parmesan cheese
- 8 oz shredded pepperjack cheese, divided
- 1 cup cilantro, chopped
- tortilla chips
Asian Grilled Chicken

1. Combine all marinade ingredients in a small bowl
- For the Marinade:
- 7 thin boneless skinless chicken cutlets (3 oz each)
- 2 tbsp lemon juice
- 2 tbsp toasted sesame seeds
- 2 cloves garlic, minced
- 2 tsp fresh ginger, peeled and minced
- 2 green onions, minced
- 1/4 cup low sodium soy sauce (for gluten free, use tamari)
- 1/4 cup teriyaki sauce
- 1 tsp honey
- 2 tsp sesame oil
