- 1/3 cup butter
- 2 oz. unsweetened melted chocolate (cooled)
- 2 cups powdered sugar
- 1 & 1/2 tsp vanilla

- 2 (8-oz.) packages cream cheese, softened
- 2 cups low-fat vanilla yogurt
- 1 cup powdered sugar
- 1 teaspoon lemon zest
- 1 pt. fresh raspberries
- Garnish: fresh mint sprigs
Salsa Mac and Cheese

1. In a 10" skillet over medium-high heat, cook beef until browned
- 1 lb ground beef
- 2 cans (14.5oz each) clear beef broth
- 3 cups dry shell pasta
- 1 can (10.75oz) condensed cheddar cheese soup
- 1/2 cup salsa

1. Mix and store in ziplock bag
- 1 &1/4 cups Tang
- 1 &1/2 cup instant tea w/o lemon
- 1/2 cup sugar
- 4 tsp cinnamon
- 2 tsp cloves
- 2 pkg. instant lemonade, sweetened (enough for 4 QT)
Lemon-Pepper Fettuccine

1. Bring a large pot of water to boil and cook pasta according to box instructions
- kosher salt
- 12 oz fettuccine
- 1 TB unsalted butter
- 1 garlic clove, minced
- 1 1/4 cup heavy whipping cream
- 1 large egg yolk
- 2 tsp finely grated lemon zest
- 1/3 cup grated pecorino cheese, plus extra for garnish
- freshly ground pepper
- crusty bread, for serving (optional)
Cilantro Lime crockpot Tacos

1. In a slow cooker combine all ingredients, chicken last
- One 24-ounce jar medium or mild salsa (leave out a little on the juice or go for a chunky salsa)
- Juice from two limes
- 1/4 cup fresh cilantro, chopped
- One 1.25-oz. package taco seasoning (I used low sodium)
- 4-6 thawed chicken breasts

- 1/2 cup mayonaisse
- 3/4 cup grated parmesean cheese
Biscuit Beef Casserole

1. Cook beef and onoin until no longer pink; drain
- 1/2 lb ground beef or turkey
- 1/4 cup chopped onoin
- 1/2 cup water
- 1/2 cup tomato sauce
- 1/4 cup tomato paste
- 1/8 tsp pepper
- 1 cup frozen veggies, thawed
- 1/2 cup part-skim mozzarella cheese
- 1 (6oz)tube flakey buttermilk biscuits
- 1 tsp butter, melted
- 1/4 tsp dried oregano
