Chicken Pot Pie

Gather 6 (8-oz) ramekins. Make the biscuit topping first
- The Topping
- 3 cups unbleached, all-purpose flour, plus some additional for rolling
- 1 tbsp, plus 1 1/2 tsp baking powder
- 1 tsp ground black pepper
- 1 scant tbsp honey
- 2 1/4 tsp salt
- 2 1/2 cups heavy cream
- The Filling
- 4 tbsp extra-virgin olive oil
- 1 1/2 cups 1/2-inch thick peeled carrot rounds
- 2 cups peeled yellow onions, halved and sliced
- 1 bulb fennel, outer layers removed, halved and sliced into 1/2-inch thick rounds
- 1/2 cup all-purpose flour
- 2 tsp paprika
- 1 cup dry (cheap) white wine
- 1 1/2 cups medium white button mushrooms, cleaned and sliced
- 1 cup celery stalks, sliced into 1/2-inch thick rounds
- 2 boneless skinless chicken breasts, seared and cubed
- 3 cups vegetable stock
- 1 large egg, lightly beaten, for egg wash
- 1/4 cup finely grated Parmesan cheese, for topping

Preheat oven at 200C & grease 3 large muffin trays
- 1.5 cups brown rice
- 3 cups water
- 2 grated potatoes
- 4 grated carrots
- 2 chopped celery sticks
- 6 pounds of ground beef (or chicken if you prefer)
- 8 eggs
- pinch of salt
- 3 tbsp of olive oil
- 1.5 cups of rolled oats
Zucchini Nut Bread Cookie Sandwiches

Directions Preheat oven to 350 degrees
- 1 cup all-purpose flour
- 1 1/4 teaspoons ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- Coarse salt
- 1 1/2 sticks unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed light-brown sugar
- 1 large egg
- 1/2 teaspoon pure vanilla extract
- 1 cup finely grated zucchini
- 1 cup old-fashioned rolled oats
- 1/2 cup chopped toasted walnuts
- 8 ounces cream cheese, room temperature
- 1 cup confectioners' sugar, sifted
Ham and Brie Sandwich

Slice baguette horizontally, and spread both sides with mustard
- 1 (18-inch-long) baguette
- 1/4 cup mustard
- 8 ounces good-quality ham, such as black forest
- 4 ounces brie cheese, sliced 1/4 inch thick
Avocado Grapefruit Salad (Ensalada de Palta y Toronja)

To make the grapefruit segments: Cut both ends off the grapefruits and stand the grapefruits on a cutting board
- 4 ruby red grapefruit
- 2 Hass avocados
- 2/3 cup pitted oil-cured olives
- 1 lime, juiced
- About 1/4 cup olive oil
- Salt and freshly ground black pepper
Ratatouille with Red Snapper

In a large nonstick skillet, heat 1 tablespoon olive oil over medium-high heat
- 3 tablespoons olive oil, divided
- 1 large eggplant (about 1 pound), trimmed and cut into small dice (about 3 cups)
- 1 medium onion, cut into small dice (about 1 1/2 cups)
- 2 cloves minced garlic (about 2 teaspoons)
- 2 medium zucchini (1 pound total), trimmed, cut into small dice (about 2 1/2 cups)
- 1 (14.5-ounce) can no-salt-added diced tomatoes
- 1 teaspoon herbs de Provence (or 1/2 teaspoon dried thyme and 1/4 teaspoon each dried rosemary and dried marjoram)
- 3/4 teaspoon salt, plus more for seasoning
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh basil leaves, plus more for garnish
- 4 (5-ounce) fillets red snapper, skin on
- 2 teaspoons lemon juice
- 2 teaspoons rosemary (or other herb) infused olive oil, optional
California Fig and Goat Cheese Pizza

Heat oven to 450. In large deep skillet or Dutch oven, melt butter in oil over medium heat
- 1 tablespoon each butter and olive oil
- 3 large onions (1 1/2 lbs.), thinly sliced
- 1 tablespoon balsamic or red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup thinly sliced Blue Ribbon Orchard Choice or Sun-Maid Mission or Calimyrna Figs, stems trimmed
- 1 tablespoon chopped fresh thyme or1 teaspoon dried
- 1 12-inch Italian bread shell pizza crust
- 2/3 cup (3 1/2 oz.) crumbled mild goat cheese

Honey-Soy Broiled Salmon
