- 1/4 cup 2% milk

Pesto: Rinse spinach, drain briefly, and then place in large glass bowl
- Onion steaks:
- 6 oz. baby spinach leaves (about 6 cups )
- 1 to 2 garlic cloves - peeled
- 1/2 teaspoon (packed) finely grated lemon peel
- 3 cups fresh arugula leaves
- 2 tablespoons pine nuts
- 1 teaspoon fresh lemon juice
- 1/4 cup extra virgin olive oil
- 2 tablespoons grated parmesan cheese
- 2 lbs ground chuck
- Ciabatta buns
- 4 fresh mozzarella slices - 1/3 inch thick (about 6 oz total )
- Large slices tomato
- Salt + pepper
- 1/4 cup olive oil
- 2 tablespoons butter - melted
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1 1/2 teaspoons balsamic vinegar
- 2 large sweet onions, peeled, cut horizontally into 1/2 inch thick slices
