  • Onion steaks:
  • 6 oz. baby spinach leaves (about 6 cups )
  • 1 to 2 garlic cloves - peeled
  • 1/2 teaspoon (packed) finely grated lemon peel
  • 3 cups fresh arugula leaves
  • 2 tablespoons pine nuts
  • 1 teaspoon fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons grated parmesan cheese
  • 2 lbs ground chuck
  • Ciabatta buns
  • 4 fresh mozzarella slices - 1/3 inch thick (about 6 oz total )
  • Large slices tomato
  • Salt + pepper
  • 1/4 cup olive oil
  • 2 tablespoons butter - melted
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1 1/2 teaspoons balsamic vinegar
  • 2 large sweet onions, peeled, cut horizontally into 1/2 inch thick slices
  • Salt + pepper
  • Bamboo skewers, approximately 6” long (soaked in water for several hours)
