Christmas Spritz Cookies

These are the best Spritz cookies to make! They don't spread alot on the sheet and the dough is easy to work with
- 2-1/2 c. flour
- 1/4 t. salt
- 1 c. soft unsalted butter (2 sticks)
- 1-1/4 c. powdered sugar
- 2 egg yolks (use the whites for Air Cookies)
- 1/2 t. almond extract (you can use peppermint extract, if you want to do red & white poinsettias)
- 1 tsp. vanilla
- sprinkles/colored sugar
- red and/or green food coloring

- PATE (even people who don't like liver will like this one):
- 1 8-oz. cream cheese, softened
- 1 8-oz. braunsweiger (liverwurst) with bacon
- 1/2 onion, finely chopped

- CORNED BEEF SPREAD
- 1 8-oz. cream cheese, softened
- 2 pkgs. Brundig shredded corned beef (can use ham too)
- 1-2 TB. horseradish

- CHEESE SPREAD
- 1 8-oz. cream cheese, softened
- 4 oz. shredded cheddar cheese
- 1 sm. can diced mild chili peppers
- Creole salt
- *** *** ***
- CREOLE MUSTARD / DILL DIP
- 1/2 c. Creole mustard (coarse, spicy)
- 1/2 c. sour cream (ok - no cream cheese)
- 1-3 TB. dried dillweed
- VEGGIES to dip
Cherry Cola Jello Mold

- 1 can COLA
- 1 16-oz. can pitted Dark Cherries
- 1 20-oz. can crushed pineapple, with juice
- 1 6-oz. black cherry jello mix
- 2 c. chopped pecans
Cornbread (for a crowd)

This is a lighter, slightly sweeter cornbread (with a cakey texture)
- 1 package yellow cake mix
- 1 15-oz. package corn bread mix
- 1 12-oz. can creamed corn
- 2-1/2 cups milk
- 3 eggs
Meringue "Air" Cookies

MY favorite cookie, when I was little, and a favorite of Beth's too
- 3 egg whites
- 1/2 t. salt
- 1 tsp. vanilla
- 3/4 c. sugar
- 1-2 c. chocolate chips (I like mini)
- 1/2-1 c. finely chopped nuts (opt.)
- 1/4 c. coconut
- For Christmas, I like these tinted with RED FOOD COLORING and I add 1/4 tsp. peppermint extract and some crushed candy canes
7-Up Cake

A great POUND CAKE, made with a can of 7-Up ~ could also use Cherry 7-Up, Dr
- 3 cups flour
- 1/4 tsp salt
- 5 large eggs
- 3 cups sugar
- 1 cup unsalted REAL butter, softened
- 1/2 cup vegetable shortening (oil or Crisco)
- 1-1/2 tsp vanilla extract
- 1/2 tsp lemon extract
- 1 cup 7-Up
Grilled SALMON with DILL SAUCE

This is something that I make almost every week (on the BBQ)
- Sauce:
- 1 about 1 lb. salmon steaks (or large fillet)
- olive oil
- 1 tsp. garlic powder
- 1/2 tsp sea salt or Kosher salt
- 2 tsp dill weed
- 1/4 cup mayonnaise (or sour cream)
- 1/4 cup Dijon or Creole mustard
- 3 tsp dillweed
QUICHE Bites

A great appetizer for a buffet table, or to bring to a pot-luck
- 2 6-oz. jars marinated artichoke hearts(drained & chopped)
- 1 small onion, chopped
- 1 clove garlic, minced
- 1/4 c. fine dry bread crumbs
- 1/4 t. salt
- 1/8 tsp. EACH pepper, oregano and tabasco sauce
- 1/2 lb. shredded sharp Cheddar cheese
- 2 Tb. minced parsley
- 4 eggs, beaten

- Can substitute 2 small cans mild, diced chili peppers for the artichokes

An unbelievably YUMMY parfait-type dessert - very light and perfect for a summer brunch
- 1 pt. (2 c) heavy whipping cream
- 1/2 c. SUPERFINE white sugar
- juice of 4 lemons
- grated zest of 2-4 lemons
- 2 Tb. CONDENSED (Eagle Brand) milk
- Berries for garnish
