Puttanesca Sauce

- 5 Tb. extra-virgin (Ha!) olive oil
- 1/2-1 tsp. red pepper flakes
- 1 chopped onion
- 1-6 crushed garlic cloves
- 3-6 chopped flat anchovy filets (you won't taste them)
- 3 14-oz. cans Italian plum tomatoes, smashed (or use crushed tomatoes)
- 1-2 c. sliced kalamata olives
- 1-2 Tb. capers
- cooked pasta (1 package)
- Think those "ladies" used alot of mouthwash after eating this?
Raspberry Jelly Roll

This can be filled with whipped cream and raspberries, blueberries or strawberries
- Filling:
- 3 eggs
- 1 c. sugar
- 1/3 c. water
- 1 tsp. vanilla
- 3/4 c. flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2/3 about 2/3 c. jam (plain jelly roll)

- 2 c. heavy whipping cream
- 6 Tb. powdered sugar
- fresh berries

- Fillings:
- 1 c. water
- 1/2 c. butter
- 1 c. flour
- 4 eggs
- Chocolate or Vanilla Pudding
- Whipped Cream & Strawberries
- chicken/egg/ham salad
Peppermint Marshmallows

Zac's favorite! ... They take some time (and some patience), but really aren't hard at all
- 3 envelopes (.75 oz each) Knox unflavored gelatin (do NOT use “jello”)
- 1/2 cup cold water
- 2 cups sugar
- 2/3 cups light corn syrup
- 1/4 cup water
- 1/4 tsp salt
- 1 tsp pure vanilla extract
- 1/2 tsp peppermint extract
- 2-3 drops red food color
- 3-4 crushed candy canes (or 7-8 Starlight kisses)

Fruity RAISIN BRAN MUFFINS

Makes a LOT of batter ~ Keep it in the refrigerator (up to 3 months) and just bake as many as you want at a time
- 3 cups sugar
- 1 cup oil
- 4 eggs, beaten
- 1 qt. buttermilk
- 5 cups flour
- 2 tsp. salt
- 3 tsp. cinnamon
- 5 tsp. baking soda
- 1 (15 oz) pkg. raisin bran
- 1-2 cups golden raisins
- 1 small jar orange marmalade, or apricot or apricot/pineapple preserves
Gingerbread

Old-fashioned GINGERBREAD, just like Great used to make every year
- 1/2 cup white sugar
- 1/2 cup unsalted butter, room temperature
- 1 egg
- 1 cup molasses
- 2-1/2 cups flour
- 1-1/2 tsp baking soda
- 1-1/2 tsp cinnamon
- 1-1/2 tsp ginger
- 1/4 tsp EACH nutmeg AND cloves
- 1/2 tsp salt
- 1 cup hot water
- powdered sugar to sprinkle on top
Apricot Strudel

Honeymom made this every year for the Holidays, and I try to do it too
- 2 cups flour
- 1/2 lb. butter (cold, cut into small cubes)
- 8 oz. sour cream
- 1 jar apricot preserves
- 1 cup small (almost finely) chopped nuts (walnuts or pecans are best)
- 1 cup golden raisins
- 1/2 cup flaked coconut

Celestial Pound Cake

This is the BEST pound cake I've ever tasted! It's a big, old-fashioned MOIST cake (totally from scratch)
- 1/3 cup apricot brandy
- 1 tsp pure vanilla extract
- 1 tsp orange extract
- 1/2 tsp EACH lemon AND rum AND almond extracts
- 3 cups CAKE flour (sifted or whisked)
- 1/2 tsp baking soda
- pinch salt
- 1 cup sour cream
- 1 cup unsalted butter, room temp
- 3 cups sugar
- 5 eggs, room temp
Rodeo Ribs (Beef or Pork)

These are the ribs that Beth and Heather always chose as their "birthday dinner"
- Rodeo Sparerib Sauce:
- 1 c. catsup
- 1 c. chicken stock or water
- 1/4 c. vinegar
- 1 Tb. Worchestershire sauce
- 1 Tb. sugar
- 1 tsp. EACH salt & celery seed
- 2-3 dashes tabasco sauce
- 4 lbs. ribs
Austrian Steak Goulash

This was a favorite of Beth and Heather when they were young
- 2 lbs. chuck steak, cut into 2" cubes
- 1/4 c. solid shortening (or olive oil)
- 1 large onion, chopped
- 3 strips bacon, cut into 1/2" pieces
- 2 garlic cloves, minced
- 2 tsp. paprika
- 1/8 tsp. caraway seeds
- 1/4 c. dry red wine
- 2 Tb. wine vinegar
- 2 Tb. tomato paste
- water
- salt & pepper to taste
- cooked & buttered wide noodles
