Cream of Spinach Soup

Otherwise known as "FROG IN A BLENDER" Soup ~ easy to do
- 1-1/2 cups water
- 3 cubes chicken bouillon
- 1 10-oz. package frozen chopped spinach (thawed)
- 1/4 cup flour
- 3 cups milk (or 1/2 & 1/2 ~ or cream)
- 1 TB minced onion
- salt and pepper to taste
- Can swirl some sour cream through the top before serving

- 3 about 3 quarts water
- 1/4 lb. bacon, chopped
- 1 medium onion, coarse chopped
- 2-3 jalapenos, seeded and finely minced
- 1 TB crushed garlic
- 1 TB Kosher or sea salt
- 1/2 tsp cumin
- fresh cilantro to garnish
Tropical Chicken Salad

This is one of those dishes that I forget about; and then when I do make it, I'm always surprised at HOW GOOD it is
- 2 cups cubed, cooked chicken (just simmer a whole
- breast in some water about 30-45 min)
- 1 cup pineapple chunks (drained, if canned)
- 1 cup green seedless grapes, halved
- 1 small can mandarin oranges, drained
- 1/2 cup chopped macadamia nuts (optional)
- mayonnaise, salt & pepper to taste

- 1 c. vegetable oil
- 2 eggs
- 1/2 c. molasses
- 4-1/2 c. flour
- 3 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. each cloves (I usually don't have any) and ginger
- 1/2 tsp. nutmeg
- Sugar to roll them in
Lemon Krispie Cookies (from cake mix)

Light, tangy cookies with the crunch of Rice Krispies
- Glaze:
- 1 box lemon cake mix (with pudding)
- 1 cup Rice Krispies
- 1/2 c. melted butter
- 1 large egg
- 1/2 about 1/2 c. powdered sugar
- 1 about 1 tsp. lemon juice
- Whisk together with small whisk ...adding sugar or juice until correct drizzle consistency
Italian Meat Loaf

Whenever I ask Billy what he wants for dinner, it's either Sausage & Peppers or Meatloaf! I'm not a fan of most me...
- 1 to 1-1/2 lbs. VERY lean ground beef (I use 96/4)
- 1 egg
- 1 TB olive oil
- 1/2 to 3/4 cup fine dry Italian bread crumbs
- 1-2 TB crushed garlic
- 1-2 tsp oregano (minced, if fresh)
- 1 tsp minced fresh rosemary (use less if using powder)
- 2-3 fresh basil leaves, chopped fine (optional)
- 1 fresh rosemary sprig (optional) ~ to top meatloaf
- 2 tsp salt (preferably sea salt or Kosher salt)
- 1/2 cup freshly grated Parmesan and/or Romano cheese
- 1 can (about 15 oz) diced tomatoes with Italian seasonings,
- including the juice

- 1 package pound cake mix
- 1 stick (8 oz.) melted butter
- 2 eggs

- 1 8-oz. cream cheese, room temp
- 2 eggs
- 1 tsp. vanilla
- 1 stick (8 oz.) melted butter
- 1 box powdered sugar
Pumpkin Chocolate Chip Cookie Puffs

Light, cakey cookies that Chris likes
- Glaze:
- 2-1/2 c. flour
- 1 tsp. EACH baking soda & baking powder
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/3 tsp. salt
- 1-1/2 c. sugar
- 1/2 c. vegetable oil
- 1 egg
- 1/2 tsp. vanilla
- 1 15-oz. can pumpkin puree
- 6 oz. chocolate chips (I like mini)
- 2/3 about 2/3 c. powdered sugar
- 1 about 1 Tb. apple juice
- Beat with a small wire whisk; adjusting sugar or juice until drizzle consistency
Peanut Brittle & Peanut Butter Fudge

2 different recipes here ~ neither of them need a candy thermometer and are SUPER EASY Peanut Butter Fudge ~ NO
- PEANUT BUTTER FUDGE
- 1 cup butter (2 sticks) ~ melted
- 7 oz. marshmallow crème/fluff (usually 1 jar)
- 18 oz. peanut butter (crunchy is fine, if you want nutty fudge)
- 1/2 tsp vanilla
- 1 lb. powdered sugar
- Add butter, marshmallow crème, peanut butter and vanilla to bowl of electric mixer. Beating on low, slowly add powdered sugar until everything is well incorporated ~ may want to whirl a few seconds on medium speed just to get it all thoroughly mixed.
- Line a cookie sheet with saran wrap and put the fudge onto it. Cover with saran and roll with rolling pin to even it out (into a rectangle, if possible). Chill at least 2 hours. Cut and serve.
Butterscotch Pull-Apart Coffeecake

Easy to make, and impressive to serve to overnight guests
- 1 pkg (2 doz) frozen rolls (Bridgeford)
- 1 small pkg butterscotch pudding (NOT INSTANT)
- 1/2 c. brown sugar
- 1/4 c. melted butter
- 2 tsp. cinnamon
- 3/4 c. chopped nuts
- If you substitute chocolate, lemon, vanilla pudding, use white sugar
