White Sangria

This is SO good! Make it a DAY AHEAD and just add the Club Soda at the last minute
- 2 (750 ml) bottles dry white wine
- 1 small can EACH: orange juice, pineapple juice AND
- limeade juice frozen juice concentrate (thawed)
- 1-2 EACH orange, lime & lemon ~ sliced
- 6 cups (or 1 bottle) Club Soda
- Mint to garnish (optional)
Eggnog Punch Bowl

Honeymom always made this at Christmas
- 6 eggs
- 1/2 – 1 cup sugar (start with 1/2 cup & add more per taste)
- 2 cups milk
- 2 cups whipping cream or half-and-half
- 1-1/2 tsp pure vanilla extract
- 1/4 tsp cinnamon
- 1/4 – 1/2 tsp nutmeg (depending on your taste)
- vanilla ice cream and/or fresh whipped cream
- Rum and/or Brandy
English Butter Toffee

Easy CANDY to make ~ tastes somewhat like "honeycomb" chocolates
- 1-1/3 cup water
- 1 cup real butter, softened
- 2 TB sugar
- 1 TB dark corn syrup
- 1 tsp vanilla
- 3/4 cups semisweet chocolate chips
- 2/3 cups chopped nuts (walnuts, almonds, pecans)
Eggplant Parmigiana

My own version ~ more like a lasagna
- 1 medium eggplant, cut across into 1/4” slices *
- The peel has the strong eggplant flavor, so if you like that,
- leave the peel on. For a more subtle flavor, peel eggplant first
- 1/2 cup flour
- 2 tsp. garlic powder
- 3 tsp. chopped or dried oregano
- 3 tsp. chopped fresh rosemary (plus 1 fresh sprig, if possible)
- 1 cup Italian bread crumbs
- 1 large egg, lightly beaten
- 2 About 2 cups marinara style sauce (Homemade is perfect, but I
- also like Bertolli’s Roasted Garlic, in a jar)
- olive oil
- 8 oz. sliced fresh buffalo mozzarella (regular REAL mozzarella
- will work too, but not quite as good)
- 8 oz. shredded Provolone cheese
- 1/4 – 1/2 cup grated Parmesan or Parmigiano-Reggiano cheese
Pumpkin Peace Pipe Pie

This is a fabulous pumpkin pie, with an ice cream layer, whipped cream and candied pecans
- Filling:
- 1 pint vanilla ice cream (softened)
- 2 ~ 9” baked pie shells (frozen, premade are fine
- 1 1-lb. can pumpkin
- 1-1/2 cup sugar
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1-1/2 c. heavy whipping cream
- 1 tsp pure vanilla extract
- Topping:
- 1 cup chopped pecans
- 1/4 c. sugar

Marinated Artichoke & Rice Salad

Maybe the PERFECT pot-luck dish
- 1 package chicken flavored rice mix (like Rice-a-Roni)
- 2 green onions, thinly sliced
- 1/2 green bell pepper, small diced
- 8 pimento-stuffed olives, thinly sliced
- 2 6-oz. jars marinated artichokes (cut into pieces)
- 1/4 tsp. curry powder (DON'T leave it out! No one will know it has curry!)
- 1/3 c. mayonnaise

Surprisingly, this is a recipe that Grandma Shirley gave me many years ago
- peel of 3 medium tangerines
- 1 cup sugar
- 1/2 cup water
- 1/2 cup milk
- 1/2 tsp salt
- 1 egg, beaten
- 2 cups flour
- 2 tsp. baking powder
- 3/4 cups somewhat fine chopped nuts (I like pecans or walnuts)
- Powdered sugar (start with about 1/2 - 3/4 cup)
- 3 About 3 capfuls Triple Sec, Grand Marnier or orange juice
Hot Crab Dip

This is a recipe that I've made for MANY years ~ one of the appetizers that I made for the huge Christmas parties
- 8 oz. cream cheese, softened
- 4-6 about 4-6 oz. FRESH crabmeat (or 1 can) ~ don’t use “fake”
- 2 TB onion, chopped
- 1/2 tsp horseradish
- 1 TB milk
- 1/4 tsp salt
- dash of cayenne
- 1 TB minced parsley
- 1 tsp lemon juice
- 1 TB sherry or brandy (optional, but better with it)
- sliced almonds
- Crackers or melba toast
